    Tabouli

This recipe was adapted from one in the original 1984 edition of The Vegetarian Times Cookbook. Don't leave out the allspice! It gives it a great flavor.

For authentic-tasting tabouli, use olive oil, but people following a fatfree diet may use one of the substitutes mentioned.

    Serves 4-6

    3/4 cup boiling water

1/2 cup cracked wheat or fine bulgur

    1/2 cup minced parsley

    1/4 cup minced mint leaves

1/2 cup finely chopped green onion

    1 tomato, diced

    1 cucumber, seeded and diced

3 tablespoons olive oil OR oil substitute (fatfree Italian dressing, liquid from cooking chickpeas*, or reduced vegetable broth)

2 tablespoons lemon juice, or to taste

1 tsp. sea salt, or to taste

    Pepper to taste

    Pinch allspice

Pour boiling water over the cracked wheat, cover, and let stand about 20 minutes until wheat is tender and water is absorbed. Add the chopped vegetables and toss to mix. Combine oil or substitute, lemon juice, salt, pepper, and allspice. Add to wheat mixture and mix well. Chill. Serve and enjoy.

    1 Bunch Green Onions

    2 Large Ripe Tomatoes

    1 Small cucumber (optional)

    2 Lemons

    1/3 cup Olive Oil

    ¼ tsp Cumin (optional)

    salt to taste

The optional ingredients are defintely delicious, but in a a pinch, you can do without. Enjoy!

This tangy cracked wheat dish comes from the Eastern Mediterranean countries, but it has become one of America's hottest food trends. It may be served as an appetizer, with romaine leaves for dipping, or spooned onto lettuce-lined plates as a salad. If you have trouble locating the bulgur in your supermarket, try a health food or natural food store.

    "Tabbouleh" - 6 servings

    1 cup bulgur (cracked wheat)

    2 large tomatoes; finely chopped

    1 cup chopped parsley

    1/2 cup chopped fresh mint

1/2 cup chopped green onions (scallions)

1/2 cup olive or salad oil

    1/2 cup lemon juice

    1/2 tsp. salt

    1/4 tsp. pepper

    Romaine leaves

    1) In large bowl, cover bulgur with cold water. Let stand at room temperature 1 hour. Pour into cheesecloth-lined colander; squeeze out excess water. Return bulgur to bowl.

    2) Stir in tomatoes, parsley, mint, onions, oil, lemon juice, salt and pepper. Cover; refrigerate until serving time, at least 4 hours.

    3) To serve: Spoon tabbouleh onto romaine-lined salad plates or serve from a bowl with romaine leaves for dipping. Yields 5 cups.

    What Is Tabouli

  • 1 decade ago

It's a traditional middle eastern dish made with onions, parsley, bulgur, olive oil, lemon juice and tomatoes. Costco has a prepared brand by Hanna that's great.
