    Orange Glazed Flank Steaks

    Ingredients:

    Marinade:

    2/3 cup dry red wine

    1/2 cup fresh orange juice

    1/3 cup fresh lime juice

    1/2 cup honey

    1/4 cup cider vinegar

    1/4 cup soy sauce, preferably Kikkoman

    2 tablespoons mild olive oil

    1 1/2 teaspoons minced garlic

    1 teaspoon finely grated orange zest

    1 teaspoon Tabasco sauce

    1/2 teaspoon ground cumin

    1/2 teaspoon dried thyme crumbled

    1/4 teaspoon freshly ground black pepper

    2 beef flank steaks (2 pounds each)

    Preparation:

    To make the marinade, combine all the ingredients in a shallow 14 inch glass baking dish and stir until the honey is dissolved. Add the flank steaks and turn to coat with the marinade. Cover and refrigerate overnight.

    Drain the steaks, reserving the marinade. Bring the steaks to room temperature

    Meanwhile, place the marinade in a large skillet and bring to a boil over high heat. Continue boiling until the liquid is syrupy and mahogany colored, about 10 minutes Remove from the heat and let cool.

    Prepare coals for grilling or preheat the broiler. Brush the glaze on both sides of the steaks and cook to medium-rare, about 4 minutes on each side.

    Santa Fe Flank Steak

    Ingredients:

    1 flank steak, trimmed, a little over one pound

    1/4 cup corn oil

    1/4 cup fresh cilantro, minced

    4 cloves of garlic, minced

    2 tsp. salt

    2 tsp. cumin

    1 tsp. coriander

    1 tsp. cayenne

    1 tsp. fresh racked pepper

    Procedure:

    Once the flank steak in cleaned of any fat or sinew, place it in a zip lock style bag. The one gallon size.

    Combine the marinade ingredients and pour over the steak and place in the refrigerator overnight.

    When ready to cook, remove from the refrigerator and grill on a hot grill for 4 minutes per side to reach medium rare. Allow the steak to rest for 4-5 minutes once it comes off the grill.

    Slice against the grain and serve immediately.

    An oldie but goodie: Using a food processor, grate carrots, onions, celery, and bell peppers using the medium shred wheel. Cook in a non-stick pan until limp. Pound flank steak until tender. Trim any really apparent fat. Spoon vegetables into middle of steak, roll up, tie with string. Place in baking pan in 350F oven for about an hour. Serve with tomato sauce.

    Flank Steak:

    1 medium head garlic

    1 1/2 pounds flank steak

    2 teaspoons freshly ground black pepper

    4 tablespoons butter

    1/4 cup scallions, chopped

    1 cup dry red wine

    Cut head of garlic in half, place on a square of foil, and drizzle with olive oil. Wrap. Bake at 400 for 45 minutes. Squeeze roasted garlic cloves out of skins, and mash into a puree. Set aside.

    Sprinkle steak with salt and lots of pepper. Heat a large heavy skillet over medium high heat. When hot, cook seasoned steak until seared and well browned on both sides, about a minute per side. Reduce heat to medium, and add butter. Continue to cook for 2-3 minutes on each side (more if you want it well cooked). Remove from heat.

    Pour off the fat in the skillet into a pot, and add scallions and red wine. Bring to a boil, and whisk in the garlic mash. Boil until the wine is reduced and it's syrupy.

    Slice the meat, pour the sauce down the center of the slices. Serve at once.

    Flank steak is so good it is best done on the grill or in a fry pan. Sometimes I marinate it in Terriyaki sauce. Most times I just rub it with olive oil salt and pepper and sear in a fray pan. Delicious.

    Shnitzel

    Pound the meat thin.

    Put the meat in an egg wash (beaten egg.)

    Dredge the meat in some seasoned bread crumbs.

    Fry in some oil until crispy.

    Decorate with a slice of lemon.

    Holy Shnitzel it's easy.
