Eggy Benedicty Christmassy Breakfasty Problemy!!!?
Oh dear, I've promised my girlfriend to cook eggs benedict for christmas breakfast because I'm a lazy @rse around the kitchen. It looks simple enough but how easy is the sauce to do? Any tips would be handy. I'll probably be too drunk to cook anyway.

I used to run a pub and came up with this version, very easy!
Grill muffin and grill some streaky bacon or parma ham whichever your budget allows for until crispy and cooked.
Poach an egg in a pan of boiling water, make up a packet mix for hollandaise sauce but add some cream.
Put bacon/ham on muffin, top with boiled egg and cover with hollandaise sauce, yummy!! I made these as a starter last Christmas but only did half a muffin each, that was plenty.

Quick and Easy Eggs Benedict
This is a no-fuss, easy recipe. The sauce is simply put together in a blender - no double boiling necessary. Assemble eggs with sauce over hot buttered English muffins with Canadian bacon, or if you prefer, Serrano ham. Yum!
INGREDIENTS
4 slices Canadian bacon
1 teaspoon white vinegar
4 eggs
1 cup butter
3 egg yolks
1 tablespoon heavy cream
1 dash ground cayenne pepper
1/2 teaspoon salt
1 tablespoon lemon juice
4 English muffins, split and toasted
DIRECTIONS
In a skillet over medium-high heat, fry the Canadian bacon on each side until evenly browned.
Fill a large saucepan with about 3 inches water, and bring to a simmer. Pour in the vinegar. Carefully break the 4 eggs into the water, and cook 2 to 3 minutes, until whites are set but yolks are still soft. Remove eggs with a slotted spoon.
Meanwhile, melt the butter until bubbly in a small pan or in the microwave. Remove from heat before butter browns.
In a blender or large food processor, blend the egg yolks, heavy cream, cayenne pepper, and salt until smooth. Add half of the hot butter in a thin steady stream, slow enough so that it blends in at least as fast as you are pouring it in. Blend in the lemon juice using the same method, then the remaining butter.
Place open English muffins onto serving plates. Top with 1 slice Canadian bacon and 1 poached egg. Drizzle with the cream sauce, and serve at once.

Why don't you make this dish .. you can prep it the night before and just heat it up in the morning ...
Peel and dice 2 large potatoes .. boil until tender .. sautee with some chopped onions and peppers .. season with salt and pepper ... empty into the bottom of small casserole dish. In the same pan, add a tbsp of olive oil, 2 cloves of crushed garlic ... sautee until soft, but not brown .. add 2 cups of fresh spinach leaves (washed well), season with salt and pepper and cook until wilted ... spread this over the potatoes ... top this with poached eggs and top the eggs with shredded gruyere ... In the morning pop the whole thing in the oven until heated through and the cheese is bubbly.

3 big egg yolks in a bowl over boiling water. Two tablespoons of white wine vinegar in with it. Big knob of butter, pinch of salt. Cayenne pepper.
Heat it up carefully, making sure it doesn't go lumpy. When that happens, it's ruined.
Pour over poached eggs (just throw two eggs in some boiling water then scoop out. I like a bit of smoked salmon on top.

Far overrated anyhow poncy poached eggs!, try eggnog made with Mulled wine, sure clears the hang over!!!

You can probably buy the sauce ready done somewhere - try a posh supermarket. Good luck.

Buy a jar of Hollandaise sauce and please stop putting a y on the end of your words.
