Christmas Breakfast?
I need to make breakfast for 6 to be transported on Christmas Morning for my family. Does anyone have any great ideas that are 1) easy to reheat, 2) diabetic-friendly, and 3) not a generic breakfast casserole?

I have the whole family coming for Christmas Dinner so I had to find something really easyI could prepare ahead and just pop in the oven for my husband & I.
I came up with eggnog french toast and an egg ham & cheese bake.
For the french toast, you just cut up some bread and fit it (pack it in a little!) in a casserole dish (I'm using an 8" square glass dish, it's the only one I don't need for dinner!!) then just pour eggnog the kind in the carton in the dairy section at the supermarket) over the bread. (Add some milk mixed with a beaten egg if there's not enough to just cover all your bread.) Sprinkle the whole thing with nutmeg and bake it at 350°F until set.
For the eggs, I just chop up some ham, and some green onions, put them in a pie plate, sprinkle grated cheese over the top, then beat 3 eggs with about 2 tablespoons of cream and pour that over the ham & cheese. (It's like a quiche but with no crust)
Bake this at the same time as the french toast, it should take about the same time.
Both of these you could mix up the night before, then either take them with you & cook there, or pop them in the oven before you leave, undercook them slightly, and then give them another 15 minutes in the oven when you get there to finish cooking and warm them up.

Christmas Breakfast Casserole
Tear 10 slices of bread in pieces and put in greased 9x13 baking pan. Fry 1 lb. sausage or cut up 1 lb. smokie links and put on bread. Sprinkle 8 oz. shredded cheese over all. Mix 6 eggs, 2 cups milk, 1 tsp. dry mustard and pour over all. Refrigerate all night and in the morning bake at 350 degree for 1 hour. Nice for brunch or church breakfast. This transport nicely so you can cook it where you are going and its good for diabetics. I am a diabetic too! Good Luck and Merry Christmas!

Delicious Breakfast Casserole Bread 1 lb. Sausage 8 to 10 Eggs 2 cups Shredded Cheddar cheese (or whatever kind your prefer) Any veggies you would like to add like mushrooms, onions, or green peppers Step OnePREPARE INGREDIENTS: First you will need to brown your sausage in a frying pan. While your sausage is browning, you can toast you slices of bread. You will need to use enough slices of bread to completely cover the bottom of your casserole dish. Toasting the bread allows it to stand up better and not get soggy from the egg mixture. While your sausage and toast are finishing up you can crack 8 to 10 large eggs and beat them in a bowl, add some salt and pepper for seasoning if you would like. This is where you can also add some vegetable like mushrooms or green peppers to the eggs if you would like. Make sure that all of your guests like these ingredients before you add them. You could simply serve them on the side if some guests do not like these vegetables. Step TwoPREPARE CASSEROLE AND BAKE: Once the sausage is finished you can mix it in with the eggs. Simply stir the drained sausage into the eggs to make sure all of the sausage is covered with the eggs well. Now you can place your pieces of toast into the bottom of your casserole dish and pour the egg mixture on top of the toast. You can then place the casserole into the oven on 375 for 15 to 20 minutes or until the eggs have began to sit up. Once the eggs have started to set up then you can remove the casserole from the oven to add your 2 cups of cheese to the top of the casserole. Place the casserole back into the oven for another 10 minutes or so until the cheese is well melted over the top of the casserole. Once the cheese is melted you breakfast masterpiece is finished and ready to be served up to your hungry guests. Serve with some slices of toast, milk, or juice if you wish. Step ThreeYour Christmas morning breakfast casserole will be a hit with your guests, but watch out they will probably want to come back to your house next year for the same delicious Christmas morning treat.

Hey most of the family must love pizza. So why not make a breakfast pizza? You could alter the exact ingredients to something a bit healthier or something your family would usually like to eat. Alternativley, try the frittata - very easy to reheat and much more healthy interesting and partyish.
Crustless Breakfast Pizza
1 lb pork sausage
1 cup frozen hash browns, thawed
2 red or green bell peppers, sliced thin
2 to 3 roma tomatoes, thinly sliced
1 cup sharp cheddar cheese, shred
5 large eggs
1/4 cup milk
1/8 tsp freshly ground black pepper
1 italian herbs (see note)
1 freshly grated parmesan cheese to t, aste
1 tomato slices for garnish
Heat oven to 375 degrees. Have ready a 10-inch pie plate. Crumble
sausage into a large skillet and cook over medium heat 5 to 7
minutes, Remove from skillet with a slotted spoon, pressing out
excess fat. Spoon into pie plate. Top with hash browns, bell pepper
and tomato slices and top with Cheddar. In a medium-size bowl, beat
together eggs, milk, black and herbs. Pour over cheese. Sprinkle with
Parmesan.
Bake 30 to 35 minutes, until slightly puffed and a knife inserted in
center comes out clean. (if making ahead, let cool completely, then
wrap and refrigerate. To reheat, cover with foil and bake in a 350
degree oven 20 to 30 minutes.) Garnish with tomato slices and
Parmesan.
NOTE: Instead of the Italian herbs...you can use a mixture of
chervil, parsley and tarragon.
Makes 6 servings, each; 312 calories, 19 grams protein, 8 grams
carbohydrate, 23 grams fat, 229 milligrams cholesterol, 674 milligrams
sodium.

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large nonstick, oven-proof skillet over medium-high heat, heat the oil. Add the scallions, ginger, and garlic and saute for 1 to 2 minutes. Add the red pepper and saute for 3 minutes.
In a medium-size mixing bowl, mix together the eggs and soy sauce. Add to the skillet. Cook over medium heat for 8 to 10 minutes until eggs are set on bottom.
Place the bean sprouts and snow peas over the eggs. Sprinkle with sesame seeds. Place in the oven at 350 degrees F (175 degrees C) and bake just until top is set, about 8 to 10 minutes. Watch carefully that eggs are just cooked and do not become tough. Set oven to broil. Broil the frittata for 30 seconds just to give it a nice browned color. Serve in wedges.

Impossibly Easy Breakfast Bake (Crowd Size)

Prep Time:20 min
Start to Finish:1 hr 10 min
Makes:12 servings
2 packages (12 oz each) bulk pork sausage
1 medium bell pepper, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
3 cups frozen hash brown potatoes
2 cups shredded Cheddar cheese (8 oz)
1 cup Original Bisquick® mix
2 cups milk
1/4 teaspoon pepper
4 eggs
Heat oven to 400ºF. Grease rectangular baking dish, 13x9x2 inches. Cook sausage, bell pepper and onion in 10-inch skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain. Stir together sausage mixture, potatoes and 1 1/2 cups of the cheese in baking dish.
Stir Bisquick mix, milk, pepper and eggs until blended. Pour into baking dish.
Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minutes.

Fruit salad, assorted breads and bagels with lots of different spreads (banana nut bread, with cream cheese, pumpkin butters, etc), danish, muffins and/or coffee cake. . .Those will all work well since they obviously require no heating. . . .Plus you could probably easily find a sugar-free coffee cake at a grocery store. And I think fruit would be okay. . . . . Bacon is probably pretty easy to re-heat. . .Then maybe perpare some eggs once you get there? Best of luck to you!

All fruits are fresh vegetables. A "vegetable" is a plant, any part of which is employed for food.

In the superstore, fruits are usually selected far too soon. Some are rocks, many are bad. Some of the fresh vegetables are typical right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.

Cranberry-Peach Crescent
Ingredients
•1/2 cup milk
•1/4 cup water
•1 egg
•1/2 cup margarine or butter, cut up
•3 cups bread flour
•3 tablespoons sugar
•3/4 teaspoon salt
•1 teaspoon active dry yeast or bread machine yeast
•3/4 cup cranberries
•2 tablespoons sugar
•2 tablespoons water
•1 tablespoon cold water
•1 tablespoon cornstarch
•1/4 cup peach preserves
•Milk
•Sugar or powdered sugar
Directions
1. Add the first 8 ingredients to a 1-1/2- or 2-pound bread machine according to the manufacturer's directions. Select the dough cycle. When the cycle is complete, remove dough from machine. Punch down. Cover and let rest for 10 minutes.
2. Meanwhile, for filling, in a small saucepan combine the cranberries, the 2 tablespoons sugar, and the 2 tablespoons water. Bring to boiling; reduce heat. Cook, stirring often, for 3 to 4 minutes or until cranberry skins pop and mixture thickens slightly. Stir together the cold water and cornstarch; stir into cranberry mixture. Cook and stir until the mixture is very thick and just begins to bubble. Remove from heat; stir in preserves. Cover surface with plastic wrap and set aside to cool.
3. Grease a baking sheet. On a lightly floured surface, roll the dough into an 18x10-inch rectangle. Spread the filling down the center of dough in a 3-inch-wide strip. Using a sharp knife, slit dough at 1-inch intervals along each side of filling, cutting from edge of filling to edge of dough. Fold 1 dough strip diagonally over filling and lay down; fold a dough strip from opposite side diagonally over filling, overlapping end of first dough strip. Repeat with remaining dough strips, alternating from side to side and overlapping ends of dough strips. Curve ends to form a crescent shape; carefully transfer to the prepared baking sheet. Cover; let rise in a warm place for 40 to 50 minutes or until nearly double. Bake in a 375 degree F oven for 20 to 25 minutes or until golden brown. (If necessary to prevent overbrowning, cover loosely with foil the last 5 to 10 minutes of baking.) Lightly brush bread with milk and sprinkle with sugar. Or, cool bread completely and sprinkle with powdered sugar. Makes 12 servings.

You don't want much, do you? I mean, anything that fits the first three, doesn't fit the last one. Anything that fits the last one, doesn't fit the first three......
Okay, there has to be something that suits your fancy in here.... there are quiches, souffles, omelettes, scrambles, miscellaneous egg dishes, fruit bakes... some of them sound so yummy I may make one myself!
