Hummus - Seasame Seeds instead of Tahini?!?
Hi there everyone, I have a hummus related question. Can I use seasame seeds instead of tahini? I could not find it in a few stores I went to today. =(

Toast your sesame seeds, 1/2-3/4 cup, on a hot surface. I use a cast iron skillet which allows me to shake them around and keep the toasting even. Also you can put just a little bit of olive oil in the skillet. Make sure your seeds don't get burned. The darker they are the stronger the taste will be. Once toasted put them blender or food processor with a little more olive oil. Liquify and there is your tahini. If you think it looks too granular add a little more oil and liquify again. If you still are unhappy press through a sieve or fine strainer. I don't do that, btw. Sometimes I add just a wee bit of garlic when I liquify it.
I have used this for humus or simply tahini for falafel and other pita sandwiches. People love it.

Tahini is simply ground sesame seads.
To reach the desired consistancy in the hummus, you need a paste. You can grind the seeds yourself in a blender, or substitute peanut butter (natural, with no added sugar is best) or almond butter.

Try using toasted sesame oil, like in chinese cooking, it is nicer and you can use ti for other things like you Asian food prep.
