Yes,. The eggs serve as a "binder" in the pie and corn starch, while not as rich and flavorful, should ful fill the same role. Use the proportions that Southerns shows above gleaned from The Cook's Thesaurus... man i love that web site.

Corn starch is a standard thickening agent in the kitchen, but to sub it for eggs, I`m really not sure. Maybe finding another recipe that dosen`t call for eggs might help

Substitute 1 tablespoon cornstarch plus 3 tablespoons water for each egg called for in recipe.
