Tip 1 Some people think chicken tastes better. But your seasoning may change so make sure you taste it before you season. You may need less of some things, more of others.

Tip 2 If you are worried about the flavor then see if you have some BV, Maggi, Worcheshire Sauce, or beef bouillon cubes to "punch" it up. I keep some on the shelf just for such emergencies.

Tip 3 Don't have any of that you can use vegetable broth.

Tip 4 Don't have any broth at all, but you have a pressure cooker, make some vegetable broth - it's quick and easy.

Take onions, celery, and carrots. Cut crudely. Add a little salt and pepper. Brown them in just a little oil. Cover with 4-6 cups of water. 40 minutes in a pressure cooker and then strain. Mash all the vegetable pulp to get all the juice. The pulp at this point has given it's all so throw it away. Tip: If you strain through a cheese cloth you can ball up the cloth and force out all the juice, and clean up is a snap. You can do this while you are cooking your stew, and add it towards the end. If it is too thin then reduce it by returning it to the heat and boiling off some of the excess water.

Tip 5 Flavor needs more help: Add a little red wine to beef mixture. The alcohol cooks out.

Do you not have beef broth? If not, you can use the chicken broth, but it will be a little saltier than you would want for a beef dish. You could use a low sodium broth to ease the saltiness. I would also hold off on putting any other seasoning in the mix until you have added the chick. broth and then Spice it up from there. If you dont, you will run the risk of over seasoning and ending up with beef pie that taste like "funk"! What I would also try to do is keep vegtable broth on hand. It works much better than the chicken broth in cases like this!

I have several recipes, including one for beef stew that call for chicken stock, beef stock, or a blend of both. Shouldn't be a problem.
