Quick, but nutritious recipes for my picky, skinny 16 year-old boy?
My son is now 6'4" and only 145 lbs.! He used to be quite picky about EVERYTHING, but now says that he will eat more if it's "home-cooked"! He likes spaghetti and chicken-rice casserole. Still, I must admit I HATE cooking! I was forced to cook for my family of 7 starting at age 13 and it burnt me out.
But I want my son to gain weight and eat right. Does anyone have some EASY, quick(er), but nutritious meals (favoring carbos and meat, as my kid still hates veggies) that I can try on him? He looks like Ichabod Crane!
Thanks so far, everybody! I forgot to add that my kid is "afraid of getting fat"! I don't know where that comes from (maybe this should go into "psychology"?) but he DOES eat if he likes it. He absolutely REFUSES to eat any veggies but broccoli! He also has a Vitamin K deficiency.

hi Sieglinde! it's great that ur cooking at home - it's easier to stay healthy because u know exactly what ur eating! give my chicken fried rice a look - not too tough, u can watch my video on yahoo: http://video.yahoo.com/video/profile?yid=average.b... and the recipe on my website! cook a bunch of it - it's simple to reheat! then just add some fresh brocolli and u have a fast, nutritious meal!

Broiling a steak and nuking a baked potato are fast, and probably what he wants to eat.
Putting a burger in a pan, then placing it on a bun with lettuce, tomato and cheese might suit him.
Bringing home a barbecued chicken from your grocery store (or the Colonel's), with some potatoes or potato salad would work--it was homemade--just not by you--he needn't know that, just get rid of that incriminating trash.
Bring home a pot roast dinner from Denny's (again, chuck that paper and Styrofoam trash)

I love this, and it's easy. 1 can cream of mushroom, 1 can chicken, about 1/2 pk. of frozen veggies, and bisquick. Mix soup, chicken and veggies in casserole dish and mix bisqick for biscits and pour on top. Bake at 425 til biscit top is golden brown, and your done. My family loves it. And making it with hamburger only and add a veggie side (brocolli) that's good 2

Going to a Whole Foods, or other Natural Foods store is also a good idea. They have great wraps that are frozen as well as things that they make that day- most all are healthy. I think wraps with fat-free refried beans are a great idea, you can add veggies (lettuce, onion, pepper) to them easily. Also try sweet potatoes...they are very "good" carbs.

my step-brother is like that. since you're the parent, though, it's your job to cook for him, but teach him to cook as well. he is old enough to do so. my step-brother likes hamburgers and chicken pot pie. he does need his veggies, though, so slip some in where you can, like the V8 splash drinks, etc. good luck!
