I hope someone has an answer for this, I have always wondered the same thing.
One of the first things I was warned when I started working for vets was to avoid getting too near these breeds (and German Shepherds) as they were unpredictable & prone to biting without typical warning signs.
My Mom had a Chow as a child, and always told of how he bit everyone (family, friends, neighbors) but her Dad at some time. I also was told about a Chow ripping the ear off a judge at a dog show once. We had so many Chow, Shar Pei, Akita, Shiba Inu, etc. owners that came in to the vets with stories of how they "loved their dog" but couldn't understand why it bit - them, visitors, other family, etc.
Needless to say, I always reccomend a Norwegian Elkhound instead when people ask about one of these breeds - similar looks, but much better dispostion.

every dog has its own way of giving warning signs. you have to really watch them and see how they react to you. some breeds are just differand then others.
