Head-on Asian fried shrimp?

Does anyone have a recipe for that fried shrimp dish that you get in Asian restaurants where the head, tail and shell are left on and they get all crispy and delicious?

    They deep fry it in cornstarch to make it crispy. You can also use potato starch.

    Another popular thing to do with head-on shrimp is to cook it in just oyster sauce and water. The sauce turns pink and its yummy!

    maybe u are talking about garlic butter prawns..

    here's the recipe:

    Any amount of prawns - if it's large size carefully slice cut the back of the prawns to de-veined it but leave the shell on.

    Half cup of garlic

    7 finely chopped garlic

    A sprig of curry leaf

    1 egg beaten

    Dash of fish sauce(optional)

    Sprinkle of coarse pepper

    Salt to taste (if needed be)

    - Heat butter in high heat wok, add garlic and curry leaves. Keep stirring until garlic turned slightly brownish but not burnt

    - Add beaten egg and quickly stir, keep stirring until egg became light, and turned into rice like bits.

    - Add pepper, prawns and fish sauce. Taste it and if u think u need to add salt, u may do so. It will look a bit wet but as u keep stirring and cooking, it will become lighter, stir until the prawns are cooked and enjoy.

    Prawns are naturally tasty and sweet so you need very little seasoning. Try this:

    Heat oil in pan.

    Sautee chopped garlic until slightly brown.

    Add in prawns and stir fry.

    Add in 2 tablespoons of oyster sauce and white/black pepper.

    Fry till crispy.

    OR

    Marinade prawns with salt and pepper.

    Heat 1/4 full pan of oil.

    Deep fry prawns till crispy.

    If you want to add a little extra fusion flavour to the dish, add in curry leaves when deep frying prawns.
