Homemade cakes vs. Box mix cake?

HI everyone. I have to do a school project on which one is better a homemade cake or a box of Duncan Hines/ Betty Crocker. I know that homemade cakes are better but if anyone could please give me a website or book that backs up such an idea, it would be greatly appreciated. Also anyone's insight would also work. THANKS!

What if, instead of finding a reference, you do your own taste test?

Make a home made cake from Duncan Hines, one from Betty Crocker, and one from scratch. Cut them into tiny pieces, and have people (maybe in your class, or neighborhood), rate them. Use that data for your report.

Homemade cakes don't have additives or trans fats. They don't stay fresh as long as cake mixes.

I don't know of any websites, but try a google search or call Duncan Hine's or Betty Crocker's hot line for information about their products.

Honestly I've baked for years and most good cake mixes are about the same as homemade. The biggest difference is in the icing. Homemade icing is always better then store bought. When you think about it, it makes sense. Cake mix is just flour, sugar and flavorings like cocoa powder. But icing contains fat, like shortening or cream cheese and freshness makes a big difference.

i've tried all three of these and i can tell you that Ducan Hines Cake mix is better than Betty crocker. as far as taste you cant tell the difference between Ducan Hines and a scratch cake.

i tested this on one of my relatives, they said they only like cakes made from scratch and not box mix so what i did is i made scratch cake and a cake mix and had them taste and tell me which was which, they didnt know but told me that the cake mix was the one made from scratch. so there is difference in taste from betty crocker from the other two. there is a slight difference in appearance though. you can do your own taste test though to see what your results are

You hit the nail on the head. Yes, a home baked cake is more dense (in a good way) than a box mix. And yes, it would most surely hold up better to the fondant. Besides, it will taste much better too!

the Joy of Cooking cook book is great for answers to those kind of questions. I make 5 different homemade cakes that people rave about, I have only 5 so far always looking to add to the list.

Those who said there is no difference between out-of-box and scratch cakes are so wrong. I used to think the same until I met my girlfriend who is a pastry chef and owns her own bakery. Now I have seen the light.
