Instead of the traditional turkey and stuffing meal, how about something a bit different? If you are roasting an entire turkey, then don't stuff it. Rub it with a combination of kosher salt, rubbed sage, and pepper. Fill the cavity with onion, carrot, and celery to add to the flavor. Baste frequently with a combination of melted butter, white wine and garlic powder. Sides might include:

    1. Fresh asparagas sauteed with pancetta and lemon zest

    2. Fresh Green Bean Casserole ( an adaptation of the original recipe: 1 lb green beans picked over and cleaned, 1 lb mushrooms, cleaned and sliced, 1/2 onion, diced, 1 clove garlic, minced, 2 cups milk or half and half, 1/2 cube butter, 1/4 cup flour, salt and pepper to taste. Saute onion in butter and add minced garlic. Add mushrooms and saute until tender. Sprinkle with flour and add milk. Stir until smooth and creamy. Toss with green beans and place in casserole dish. Top with Italian bread crumbs, parmesan cheese, and dot with butter. Bake at 350 degrees for 45 minutes.

    3. Corn spoonbread

    4. Mashed potatos with garlic and sour cream

    5. Lime jello mold: 1 large pkg lime jello, 1 can milk, 1 cup mayonaise, 1 cup cottage cheese, 1 can drained crushed pineapple. To jello, add 2 cups boiling water and can of milk. Mix in mayonaise and cottage. Add crushed pineapple and pour into dish. Refrigerate until set.

    6. Hawaiian Wedding Cake: 1 yellow cake mix, baked according to directions in 13X9 inch pan. 1 large package instant vanilla pudding, mixed and thickened. 1 can crushed pineapple, drained. 1 cup coconut, 1 container Coolwhip. Top cake with pineapple, pudding, sprinkle with coconut, and top with Cool Whip. Let sit for a few hours before serving.

Do corn...the frozen kind is better than canned and is just as easy. Put the corn in a microwave safe bowl with a little water and heat is according to the instructions.

Mashed Potatos and Gravy is ALWAYS good!! Peel and cube (I just cut it in half and then half again), boil until fork tender. (try to pick them up with a fork and they fall off right away), drain water, add milk and butter until they are the consistancy that you like.

    Desserts...

    Chocolate Pie

Need: 3 eggs, Cool Whip, Chocolate Chips

Melt (in microwave...be careful not to burn!!) 1 cup of chocolate chips (or mint chocolate is good too)

mix in 1 whole egg and 2 egg yolks (put the whites in a small bowl you will use them)

add 1 cup of cool whip

mix up the 2 egg whites until foamy then add to the mix

Mix it all up and add to an already made graham cracker crust (you can buy at the store)

    Chill for atleast an hour

New York Apple Maple Cream Pie

    Crust:

    9-inch Classic CRISCO Double Crust

    Filling:

6 cups sliced peeled backing apples (Golden Delicious, Granny Smith or Jonathan is about 6 medium size apples)

    1 cup sugar

    3 tablespoons cornstarch

    1/2 teaspoon salt

3/4 cup pure maple syrup or maple flavor syrup

    1/3 cup heavy cream

    Glaze:

    milk and sugar

Prepare the crust according the the directions but do not bake (save any scraps)

    Heat oven to 400

place apples, sugar, cornstarch and salt in a large bowl. Toss to coat. Combine maple syrup and heavy cream in a small bowl. Pour over apple mixture. Mix gently. Spoon into the unbaked crust. Moisten pastry edge with water.

Roll top crust same as the bottom. Lift onto filled pie. Trim 1/2 inch beyond edge of pie plate. Fold top edge under the bottom crust. Flute (push together...I use a fork) you can decorate the top with cutouts made from the extra pastry if you want. Cut slits in top crust to allow steam to escape.

For glaze, brush with milk and sprinkle with sugar.

Bake at 400 for 40-50 minutes or until filling is bubbly and crust is overbrowning.

    mashed potatoes

    1 11-ounce potato per person

1 tb Butter for each potato

Milk as needed (1/4 to 1/2

    -cup per potato)

    Salt and white pepper, to

    -taste

    Paprika, for garnish

Mashed potatoes need not be perfectly smooth; in fact, a few small

lumps improve the texture. Nor should the milk be premeasured and

heated: The quantity needed will depend on the type and age of the

potatoes. (Mealy baking potatoes that have been stored for a long

time take more milk than new potatoes.) just pour milk in gradually,

beating after every addi- tion, until the potatoes are just right. A

few minutes in the oven before serving will reheat and puff up the

    potatoes .

    1. Bring a large pot of salted water to a boil. Meanwhile, peel

potatoes and quarter or halve them (depending on size). Drop

potatoes into the pot as they are peeled, even if water is not quite

boiling yet. Cook potatoes over high heat until fork tender (about 25

minutes after water comes to a boil). Some pieces can be left a

    little underdone. Drain well.

    2. Place potatoes and butter in a large bowl. Using a potato masher

or fork, coarsely mash them together. Make a well in the center and

pour in a small amount of milk.

    3. With an electric mixer (not a blender or food processor, which

will turn potatoes into a starchy goo) beat potatoes, adding more

milk a little at a time as needed, until the desired texture is

obtained. Tasting carefully, add salt and pepper. At this point,

potatoes can be set aside, uncovered, until the rest of dinner is

nearly ready. one half hour before serving time, preheat oven to 350F.

    4. Mound potatoes in an oven proof casserole, sprinkle with paprika,

and bake uncovered for 20 minutes.

    corn on the cob

I layer sliced pound cake, vanilla pudding, real whipped cream, Nilla Wafer crumbs and caramel sauce for mine. You can pretty much substitute any sweet ingredient you like for yours (chocolate pudding, fruit, slices of brownie or chocolate cakes, etc)
