My father is restoring a 66 pontiac Bonneville the engine is a 389 and he is trying to find out what the original color of the engine was.

Does anyone have any idea, or know where to find the information?

Norman is close! Some '66's had a multiple color scheme. Engine color scheme depended upon the car it was installed. A '66 Grand prix engine was different from a '66 GTO. If I remember correctly all the pontiac engines ,back then, Had at least one of two colors of blue or a mix thereof. Maybe the visual look of these colors depended on the base they covered. Aluminum vs. iron was very common back then. Aluminum tended to portray a silverish sparkle on some engine parts painted with the stock blue paint. It was up to the paint master to decide the final outcome and these paintmasters took some liberty in the final finish. Pontiac enjoyed these custom touches of artistic expression. They gave insperation to the next wave of designers.
