Where to start?! This one is easy and one of my favourites,
Stuffed chicken breasts with mozzarella and tomatoes:( made it up BTW I'm terrible at following recipes)
First I soak the chicken breasts in a little seasoned milk, usually just salt and pepper but you can also add oregano or other spices,then I drain them off, chop up tomatoes, or use cherry tomatoes and lay the fillet out, put some of the cheese and tomatoes in and roll , you might want to keep it all in place with a tooth pick, usually the rolls are cooperative but sometimes they aren't. Seal them in a HOT pan in a little EVOO or butter, if you aren't counting calories... then pop them in the oven or microwave, until tender they don't take long about 20 minutes.
In a pan on the stove lightly fry a small onion and 2 cloves of garlic, add a chopped bell pepper and some chopped tomatoes or tomato paste, and fry a round, season to taste boil some pasta ( I make my own) and strain. When the fillets are done, pop them in the tomato and pepper sauce for a few minutes, then serve on top of the pasta, with some of the sauce and a sprinkle of mozzarella.

I like my potatoe salad!
You will need:
Sour Cream
Miracle Whip
Black Olives
Green onions
Bacon
potatoes
2-3 eggs
Pickles or relish SOUR!
and green bell peppers (you don't have to use this if you don't want to)
You boil potatoes with skin on potatoes and put your eggs uncracked in to the pot while boiling the potatoes. Then while the potatoes are cooking you can fry your bacon or get pre-cooked bacon and add to a bowl that will have room for your potatoes once peeled and cooked. Add your pickles or relish and chop the green onions and drain your black olives these will need to be sliced if you didn't by sliced. now that you have your bacon cooked chop into small pieces and then place into the bowl make sure it's crispy. Okay once the potatoess are cooked peel them and cut them into the size you want for your potatoe salad. Now chop the eggs after peeling them into small pieces then add salt and pepper if you wish and you miracle whip and sour cream. I use light sour cream and miracle whip. but it's your call. I use half sour cream and half miracle whip. (You won't be able to taste the sour cream my father in law swears he hates sour cream and he loves my potatoe salad. lol) And mix this well. You have a potatoes salad that is different from most and will get eaten up!! Hope you enjoy!

Here is an easy dinner idea--Enjoy!!
1 pkg. (7-1/4 oz.) Macaroni & Cheese Dinner
1 Tbsp. olive oil
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 can (14-1/2 oz.) diced tomatoes and green chilies, drained
1 can (14-1/2 oz.) diced tomatoes, drained
1 can (10-3/4 oz.) condensed cream of chicken soup
1/2 cup Mexican Style Shredded Cheese
PREPARE mac and cheese as directed on package.
MEANWHILE, heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 min. or until lightly browned and cooked through. Reduce heat to medium; stir in tomatoes and soup. Cook 5 min., stirring occasionally.
ADD mac and cheese; stir until well blended. Sprinkle with cheese; cover. Cook 5 min. or until cheese is melted.

there are a few favs in our house:
Chicken & Stuffing Bake
Ingredients:
1 1/4 cups boiling water
4 tbsp. butter OR margarine, melted
4 cups Pepperidge Farm® Cubed Herb Seasoned Stuffing
6 boneless chicken breast halves
Paprika
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup
1/3 cup milk
1 tbsp. chopped fresh parsley OR 1 tsp. dried parsley flakes
Directions:
MIX water and butter. Add stuffing. Mix lightly.
SPOON stuffing along center of 3-qt. shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.
MIX soup, milk and parsley. Pour over chicken. Cover.
BAKE at 400°F. for 30 min. or until done.
Bourbon Chicken, served over steamed rice
INGREDIENTS
1 tablespoon butter
2 tablespoons olive oil
1 clove garlic, minced
1 onion, chopped
4 skinless, boneless chicken breasts
2 tablespoons chicken stock
2 tablespoons bourbon
salt and pepper to taste
DIRECTIONS
In a large skillet, melt butter or margarine and add olive oil. Saute garlic and onion until translucent. Remove garlic and onion from skillet with a slotted spoon.
Add chicken breast halves to skillet and brown on both sides. Return garlic and onion to skillet. Add broth and bourbon and stir all together. Cover and let simmer over very low heat for 20 to 25 minutes, or until chicken is tender and done (chicken juices run clear).

I have many but the most simple of them all is hotwings. Fry the wings then cover them in hot sauce and eat! Quick simple and good. Ive even done them in a crock pot and the meat falls off the bone and isnt overly spicy

one of my easy recipes comes from mr.food years ago.chicken beasts covered whatever your favorite salad dressing is -bake 45 minutes at 350 degrees.-45 minutes let your imagagination run wild! italian,french,thousland island--whatever.awesome!great salad california mix veg barely brought to boil drain-pour italian dressing.refrigerate few hours.easy and good

if you dig through my blog you'll find a bunch. although I mostly just get a mental list of ingredients and cook them up with spices and such. I tend to make it all up as I go along...
although I quite like Sharky's steak recipe!! but I wonder if he doesn't over cook it... ;-)
