Does anyone have any good recipes for...?

does anyone have any good recipes for dinner that does not have mayonnaise, sour cream in it? i am also a very picky eater and cannot eat seafood bc i am allergic to iodine. I am so tired of all the things we eat over and over again, something new would be great. also i like chicken, and stir fry type stuff. maybe something italian. thank you for any help.

    Hello. Here are some of my recipes that I make over and over again because my husband and I love them. Have fun!

    Pepper Steak

    (2) bell peppers, sliced

    Onion, sliced

    (3) garlic cloves, minced

    1 ½ lb round/sirloin steak, sliced

    (2) ½ cups butter

    Olive oil

    1 ½ cup beef broth

    Can tomato paste

    Can diced tomatoes, drained

    Worcestshire sauce

    Paprika

    Garlic salt/pepper

    Rice

    1) Make rice and set aside.

    2) Melt butter & olive oil together, then add bell peppers, onion and garlic. Once tender, remove from pan.

    3) Add more butter to pan and cook meat in the pan until done.

    4) Add vegetables, worcestshire sauce, beef broth, tomatoes, tomato paste and seasonings to meat pan. Bring to a boil. Once sauce is at the right consistency, serve over rice.

    Chicken Tortilla Soup

    6 cups of water

    3 chicken breasts w/bones

    1 onion, chopped

    2 garlic cloves, chopped

    1 bay leaf

    1 jalapeno, minced

    ½ cup cilantro, chopped

    2 cans tomatoes w/chiles

    Canola oil

    4 corn tortillas, cut into strips

    1 avocado, sliced

    1 bag cheese, shredded

    Cumin, garlic salt, white & black pepper

    1) Heat water in large stock pot until boiling.

    2) Add chicken, bay leaf, onion, garlic, jalapeno and seasonings.

    3) Boil until chicken is no longer pink inside.

    4) Strain ingredients from stock

    5) Remove bones from chicken then shred the meat

    6) Combine chicken, stock, strained ingredients, tomatoes and cilantro.

    7) Simmer for 20 minutes

    8) In frying pan, cook tortilla chips in oil until golden.

    9) Serve soup in bowls. Top with tortilla chips, cheese, cilantro, and garnish with fresh sliced avocado.

    Chicken Cacciatore

    3 chicken breasts, sliced

    1 bell pepper, sliced

    1 onion, sliced

    6 large mushrooms, sliced

    3 garlic cloves, diced

    Jar of spaghetti sauce

    1 package of spaghetti, cooked

    ¼ cup white wine

    ½ cup olive oil

    Salt & pepper

    1) Heat ¼ cup olive oil in sauté pan, add chicken. Season chicken with salt & pepper. Cook until done, remove from pan and set aside.

    2) Heat ¼ cup olive oil in large pan, add bell pepper, onion, mushrooms and garlic. Cook until tender.

    3) Add white wine to vegetables to deglaze the pan and turn heat to high. Bring to a boil and scrape up the bits on the bottom of the pan. Once boiling, reduce heat to medium and cook for 1-2 minutes.

    4) Add the jar of spaghetti sauce to wine/vegetable mix and heat. Add the spaghetti and mix thoroughly until the sauce in evenly distributed.

    5) Serve in bowls with chicken on top.

    * Serves 3

    Stromboli

    2 cans pizza/croissant dough

    1 Package of pepperoni

    2 roma tomatoes, diced

    8 fresh basil leaves sliced

    ¼ cup red onion, finely chopped

    1-2 tbsp balsamic vinegar

    1 jar of spaghetti sauce

    1 package of mozzarella cheese

    Salt & pepper

    1) Combine tomatoes, basil, onion, vinegar and salt & pepper in a bowl, mix well and set aside.

    2) Preheat oven to package directions.

    3) Separate dough from one can into two sections and lay flat on cookie sheet.

    4) Place pepperoni on dough and then cheese. Spoon spaghetti sauce over the cheese, then top w/tomato mixture.

    5) Divide dough from second can and separate into two sections. Flatten dough and place on top of the bottom piece to make a “lid”. Pinch dough on the sides to seal.

    6) Bake as long as package recommends.

    7) Heat spaghetti sauce in microwave and pour into self-serve bowls. Plate the stromboli with the side of sauce.

    Makes 2 stromboli

    Baked Steak Burritos

    ½ cup butter

    1 taco seasoning packet

    1 ½ lb beef sirloin, cut into strips

    1 can refried beans

    12 flour tortillas

    3 cups cheddar cheese, shredded

    3 green onions, sliced

    1 (10 oz) can enchilada sauce

    1) Heat oven to 400. Melt butter in skillet over medium heat. Stir in taco seasoning mix. Add beef strips, cook until done.

    2) Heat refried beans in microwave to get soft.

    3) Spread each tortilla with refried beans, top with beef, cheddar and onions. Roll up and fold into a burrito. Place seam-side down in a 13 x 9 dish.

    4) Pour enchilada sauce over burritos. Sprinkle with cheese.

    5) Bake uncovered about 10 minutes or until cheese is melted.

    * Serves 4-6

    Basil Goat Cheese Pizza

    This is among my husband's favorite dinners! The flavors compliment each other so well and it is so easy! I use frozen bread dough to speed the process. Set out dough before you leave for work and you are ready to go by the time you get home!

    INGREDIENTS

    1 (1 pound) loaf frozen white bread dough, thawed

    1 tablespoon olive oil

    salt to taste

    1/2 teaspoon ground black pepper

    1 sprig fresh basil, chopped

    1 1/2 teaspoons minced fresh rosemary

    3/4 cup Italian tomato sauce

    4 ounces crumbled goat cheese

    2 sprigs fresh basil, chopped

    DIRECTIONS

    Allow dough to rise in a covered bowl until doubled in bulk.

    Preheat oven to 425 degrees F (220 degrees C).

    Roll the dough on a floured surface into a 15-inch circle. Roll the edges towards the center to form a crust, leaving a 12-inch circle. Brush the entire crust generously with olive oil, and sprinkle with salt, pepper, 1 sprig of chopped basil, and rosemary. Bake in preheated oven until the crust begins to turn golden, 8 to 10 minutes.

    Spread the crust with tomato sauce. Sprinkle with 2 sprigs of chopped basil and goat cheese. Bake in preheated oven until the crust is brown, and the pizza has heated through, about 8 more minutes.

    Boneless skinless chicken breasts

    Potato chips

    Oil

    Crunch up the chips in a zip lock bag and set aside. Take the chicken and dip it in cooking oil then put it in the bag of chips and coat. Place in the oven at 400 for about 20-40 minutes. Should be crisp and well done. Make a yummy chicken breast. You can also use BBQ chips.

    Kraftfoods has a great website for all kinds of diets...great recipes.

    I'm not sure, but i believe alfredo sauce is basically good. Mix that with a can of spaghetti sauce, add some diced cooked chicken breasts,garlic and pepper..and serve over pasta. Dont forget the cheese :)

    I like tator tot hotdish. All you do is take a cake pan, and put a single layer of tator tots on the bottom, spread a can of Cream of mushroom and a can of cream of Celery soup over that lyer, add a pound of cooked ground beef and spread over the soup. Make a top layer of tator tots. Season with pepper, and cover. Bake for 45 minutes at 350. Serve with shredded cheese. Its simple and tastes great.

    if you dont like ground beef, use ground turkey or diced chicken breasts.

    my favorite is Honey Mustard Mozzarella Chicken INGREDIENTS 4 skinless, boneless chicken breast halves 3/4 cup honey 1/2 cup prepared mustard lemon pepper to taste 4 slices bacon, cut in half 1 cup shredded mozzarella cheese DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). Place the chicken breast halves in a baking dish, and drizzle evenly with honey and mustard. Sprinkle with lemon pepper. Bake chicken 25 minutes in the preheated oven. Top each breast half with 2 bacon slice halves, and sprinkle evenly with cheese. Continue baking 10 minutes, or until chicken juices run clear, bacon is crisp, and cheese is bubbly.

    Saute boneless chicken in garlic and olive oil, add roasted peppers and sun dried tomatoes, heat thru, toss with angel hair or other pasta.Serve with Parmesan and some nice crusty bread.Very tasty.
