Does anyone have a GREAT recipe for meatloaf?

I've tried several, but my husband and I are looking for the perfect one... So far Better Homes & Gardens cookbook has a decent one, but we're looking for something outstanding..but not eccentric.

    This is the most tender & juiciest meatloaf ever!!

    2-3 lbs. ground chuck (or sirloin)

    1 pkg. lipton onion soup

    2 eggs

    3/4 cups italian bread crumbs

    diced onions and peppers

    black pepper , garlic & your favorite seasonings

    1-2 chopped onions (bigger than the diced ones above)

    1 pkg. sliced fresh mushrooms

    3 jars brown gravy

    mix all ingredients in list #1 together

    shape into a meatloaf, in a 9x12 baking pan

    put all ingredients in list #2 around the meatloaf

    be sure onions and mushrooms are submerged into the gravy

    bake on 375

    serve over homemade mashed potatoes

    YUMMY!!

    Brown Sugar Meatloaf

    INGREDIENTS

    1/2 cup packed brown sugar

    1/2 cup ketchup

    1 1/2 pounds lean ground beef

    3/4 cup milk

    2 eggs

    1 1/2 teaspoons salt

    1/4 teaspoon ground black pepper

    1 small onion, chopped

    1/4 teaspoon ground ginger

    3/4 cup finely crushed saltine cracker crumbs

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.

    Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.

    In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.

    Bake in preheated oven for 1 hour or until juices are clear.

    You can actually bake this in a 9x13 and put quarted potatoes around it. It taste wonderful!

    I found one here on yahoo foods (doing a search) it is southwest meatloaf. Fixed it yesterday for lunch. It was very good. None left.

    4 to 5 crushed taco shells

    1 15 oz can black beans - rinsed and drained

    2 egg whites

    3 to 4 garlic cloves - diced up

    1/2 cup chopped onion

    1/2 cup green bell pepper

    1 jalepeno pepper diced

    1/3 cup cilatro chopped

    2 teaspoons ground cumin

    2 teaspoons chili powder

    1 teaspoon salt

    1/2 teaspoon black pepper

    2 pounds ground beef

    Salsa

    Mix all but the beef together in a large bowl, then add beef to mixture. Mix well. Place in a loaf pan and bake for 350 for 1 hour. When done top with Salsa.

    This was a hit with my family.

    Ingredients

    2 ea Eggs

    8 ounces Sour cream

    1/4 cup Milk

    1 tablespoons Worcestershire sauce

    1 tbs Dijon mustard

    1/4 teaspoon Salt

    1/2 cup Bread crumbs

    1/4 teaspoon Pepper

    1/4 cup Onion chopped

    1 1/2 pounds Ground beef lean

    2 tablespoons Parsley

    1 package Brown Gravy Mix 3/4 ozs.

    Directions

    In a large bowl combine eggs, cup of the sour cream and milk; stir in dry bread crumbs, finely chopped onion, snipped parsley, Worchestershire sauce, mustard, salt and pepper. Add beef; mix thoroughly. Pat into a 9- by 5- by 3-inch loaf pan or shape into the same size loaf and place in a 12- by 7 by 2-inch baking dish. Bake, uncovered, in a 350-degree F oven about 1 hours or until a meat thermometer inserted in center of loaf registers 170 degrees F. Let cool 10 minutes; remove from pan.

    Meanwhile, for gravy, in medium saucepan stir together remaining sour cream and dry gravy mix. Add water as called for on package. Cook according to package directions. Slice meat loaf and serve with gravy. Makes 6 servings.

    Hey Sticky I know how you feel. Me and My husband felt the same way. And working I did not have alot of time on my hands. Please try this you think it won't be that great but it is wondeful.

    2lbs ground beef

    1 med jar salsa any kind

    1 length of saltine crackers crushed fine

    1egg

    alittle water to rinse out jar. the water is to make it moist I just rinse the jar and add it Being frugle

    salt and pepper

    opt. garlic powder to taste

    this is wonderful

    I do not use a loaf pan i use a 13x9x2 pan and shape mine into a loaf so it is not too thich. bake at 350 for 45 min and you are good to go and did not spend hours chopping veggies.

    Not Healthy but, for the meat protion my wife has been known to use One half Hot Italian sausage and one Half beef, add two eggs some worcestshire and enough oatmeal until the consistency you want is achieved plus some minced garlic (if you want), and some salt and pepper, once in pan, cover top in ketchup.

    Use the one on the box of Lipton's Onion Soup (the 4 packet size box). It is simple and delicious. I find that baking it for an hour rather than the 70 minutes it calls for is sufficient and keeps it from getting dried out.

    Use the one from Better H&G's but substitute crumbled French Onion Sun Chips for the breadcrumbs. It's really good!
