I am a tried-and-true Nintendo freak, and know a lot about the games that they have created over the years. Well, let's start out with the classics:
For the NES, I would recommend The Legend of Zelda, which is a pretty good and decently challenging game for something that has been around over twenty years now. If you are a fan of shooters, try Metroid, or maybe Kid Icarus, a similar game but with a slight twist. There is, of course, the single most legendary game of all, Super Mario Brothers. You must play that game before you die to be a true gamer.
For the SNES, though I have never played any of them myself, by word of mouth, the most legendary three I can think of are Super Metroid, Earthbound, and Super Mario RPG, Legend of the Seven Stars. As for game I have played, Any Mario Platformer is a good way to go (especially Super Mario World). My personal fave from the era is The Legend of Zelda: A Link to the Past, which is a VERY good adventure game.
The GameBoy is a tad more difficult to help with, seeing as there are just massive amounts of great games. If you are a fan of RPGs, either of the ORIGINAL two Pokemon games, which, yes, are synonymous with the word "geek", are actually pretty decent games.
Finally, the Nintendo 64 is the most awesome of all video game systems. Try out Super Mario 64, and more importantly, the greatest game in video history, The Legend of Zelda: Ocarina of Time. Its sequel, Majora's Mask, is also worth playing. Super Smash Brothers is a quirky little fighter game, but is also awesomely fun. If you are into odd British humor, check out Banjo-Kazooie and Banjo-Tooie, as well as Donkey Kong 64; all are great adventure games.
Well, that's all I have to say! Oldies are goodies are far as I'm concerned!
