Side dish ideas?

I'm grilling a nice tri tip for dinner tonight....using the Spade L rub...yummo!

I'm bored with the stand by side dishes.....anything easy and unique out there?? I'm open! :)

    Easy Crisp Cucumber Salad [7 servings]

    4 large cucumbers

    8 radishes, thinly sliced

    1/2 cup Crumbled Feta Cheese with Basil & Tomato

    1/3 cup Zesty Italian Dressing

    1/3 cup pitted kalamata olives

    1/4 cup chopped red onion

    SLICE 1 of the cucumbers into long thin ribbons using a vegetable peeler; set aside.

    PEEL remaining cucumbers; cut into 1-inch cubes. Toss with remaining ingredients.

    PLACE mixture in center of serving platter. Arrange reserved cucumber ribbons around edge of platter.

    Try something exotic like deep fried cassava root or plantain. Its something different and delicious.

    For Plantains,

    In a large frying pan or deep fryer, heat the oil. In a separate plate, peel the plantains and slice them diagonally lengthwise. Slices should be 1/2 inch thick. Place them in the hot oil and cook for about 4 minutes turning until golden brown on both sides. Remove from oil and pat dry with a paper towel.

    For Cassava root,

    cassava root salted and fried and served with a warm dressing of olive oil, lemon, garlic and onion.

    Good luck with the side dish!

    Cut up red potatoes, toss with olive oil, salt, pepper and chopped rosemary. Roast in 425 oven for about 40 minutes. You can also throw some carrots and parsnips in there. Yum!

    smokey mashed potatoes

    i cook the potatoes in the skin and mash m with butter and milk then i add a touch ( 4 drops or so , its too taste really) of liquid smoke, chives and some sour cream...

    or...yeah..... bbq plantains are good!!

    a cold cous cous salade...

    make the couscous as it tells ya on the box ( i use broth instead of water...then let it cool down..then i make a dressing with some olive oil, lemon juice and honey and fresh garlic and fresh basil.. add some cherry tomatoes halved, some garbazo's olives whatever you like really toss it all together!!

    thats all i can think off.........my mind is set on steak as well!!! got to get my grill fired up..lol

    Try Mash.

    Carrot & Parsnip Mash.

    Mash the two together.

    Add salt and ground black pepper

    Pea Mash.

    Fold hot cooked minted peas into mashed potato & add lots of gravy
