how many days can you safely keep homemade potato salad?

Homemade potato salad can be stored in the refrigerator for 3 to 5 days.

Honey, mayo is the ingredient that you need to worry about. When first served, the potato salad should be put in frig asap. Even under the BEST of circumstances, after a week, it's time to toss the potato salad. Otherwise, you could be tossing your cookies and end up in the hospital with an ugly case of food poisioning. Is it worth it?

Hi Asongfromthe heart,
As long it's in the refrigerator I say about 4 days, if it has sat out in hot weather I'd say throw it now. I won't take a chance because potato salad has mayonaise & eggs & needs to be refrigerated.

I'd say no longer than 3 days, especially if it was sitting out like at a picnic. Always go by the phrase when it comes to food. "When in doubt, throw it out".
