Is there a certain diet I can follow to make my poo less stinky?
My current diet of authentic mexican food is tasty, but sometimes I find myself too offensive for even me.

The Mexican diet is rich in protein, and protein releases sulfur in your gastrointestinal tract. The longer protein sits in your GI, the worse the smell is. Your food must sit in your GI until it can be broken down.
If your body is not used to high-protein diets, this will be the case until it builds up a store of enzymes sufficient to break down the amount of protein you take in daily.
If this is a long term thing, you've probably just surpassed the limit of your body to digest protein for a while, making it sit in your gut for a longer time and releasing more sulfur. Maybe space it out some, or alternatively, get some lactase enzyme pills over the counter. That should fix it.
