    These are the two I use in my restaurant. Sorry they're not normal sizes. Just divide everything by 10 and you should be all set.

    Stuffed Shells

    Yield: 50 servings (4 shells per person)

    INGREDIENTS

    • 200 uncooked jumbo pasta shells

    • 7 pounds ground beef

    • 3-1/2 cups chopped onion

    • 7 garlic clove, minced

    • 14 (15 ounce) cans tomato sauce

    • 7 (28 ounce) cans Italian-style diced tomatoes, well drained

    • 3 tablespoons and 1-1/2 teaspoons dried oregano, divided

    • 1 tablespoon and 1/2 teaspoon dried basil

    • 14 eggs, lightly beaten

    • 21 cups small curd cottage cheese

    • 14 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry

    • 14 cups shredded mozzarella cheese

    • 3-1/2 cups grated Parmesan cheese

    • 1 tablespoon and 1/2 teaspoon seasoned salt

    DIRECTIONS

    1. Cook pasta shells according to package directions. Meanwhile, in a skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, tomatoes, 1/2 teaspoon oregano and basil. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes.

    2. In a large bowl, combine the eggs, cottage cheese, spinach, mozzarella cheese, Parmesan cheese, seasoned salt and remaining oregano. Drain pasta shells; cool slightly. Stuff with cheese mixture.

    3. Spread 1 cup of meat sauce into each of two greased 11-in. x 7-in. x 2-in. baking dishes; arrange shells over sauce in a single layer. Pour remaining meat sauce over the shells. Cover and bake at 350 degrees F for 40-50 minutes or until a thermometer reads 160 degrees F.

    Tiramisu Cheesecake

    Yield: 4 cheesecakes (cut in 12 slices)

    INGREDIENTS

    • 4 (12 ounce) packages lady fingers

    • 1 cup butter, melted

    • 1 cup coffee flavored liqueur

    • 12 (8 ounce) packages cream cheese

    • 4 (8 ounce) containers mascarpone cheese

    • 4 cups white sugar

    • 8 eggs

    • 1 cup all-purpose flour

    • 4 (1 ounce) squares semisweet chocolate

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C). Place a pan of water on the bottom of oven.

    2. Crush the package of ladyfingers to fine crumbs. Mix the melted butter into the crumbs. Moisten with 2 tablespoons of the coffee liqueur. Press into an 8 or 9 inch springform pan.

    3. In a large bowl, mix cream cheese, mascarpone, and sugar until very smooth. Add 2 tablespoons coffee liqueur, and mix. Add the eggs and the flour; mix SLOWLY until just smooth. The consistency of the mascarpone can vary. If the cheesecake batter is too thick, add a little cream. Do not over mix at this point. Pour batter into crust.

    4. Place pan on middle rack of oven. Bake for 40 to 45 minutes, or until just set. Open oven door, and turn off the heat. Leave cake to cool in oven for 20 minutes. Remove from oven, and let it finish cooling. Refrigerate for at least 3 hours, or overnight, before serving.

    Sweet and sour chicken

    This recipe assumes that you are using one chicken

    Ingredients

    - 1 medium onion

    - Salt, sugar, pepper, garlic, ginger

    - Yogurt

    - Vinegar

    - Bell peper

    - Tomatoes

    - Lemon juice

    - Soy sauce

    1. Marinade chicken (small pieces) in vinegar, salt, yogurt and half a teaspoon of red chili powder

    2. Take 1 medium onion, dice it up

    3. Add the garlic and ginger

    4. Heat it up in a skillet for about 2 minutes in olive oil

    5. Add chicken

    6. Cook for about 10 minutes

    7. Add tomatoes, lemon juice (1/4 of a cup) and 2 tablespoon of sugar

    8. Add a little less than half a cup of soy sauce

    9. If it is too dry add a little bit of boiling hot water.

    10. Cook till done (20 more minutes )

    11. Dice the bell pepper and decorate

    12. ENJOY

    SWEET DISH

    Strawberry Tower

    1.take a pound cake, slice it up and cut the slices in half.

    2.slice up strawberries

    3.put a little jam on the cake and a slice of strawberry and another cake with a little jam on top and then another slice of strawberry. Stack it up as far as you can go.

    4. If the stack is too big then make it lie down and cover with whipped cream and chocolate syrup.

    5. Put two chocolate dipped strawberries on the side of the plate.

    i am always asked for this berry cobbler at every family function:

    INGREDIENTS

    4 tablespoons butter

    3/4 cup all-purpose flour

    3/4 cup sugar

    1 teaspoon baking powder

    1/4 teaspoon salt

    3/4 cup milk

    2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)

    1 tablespoon sugar

    DIRECTIONS

    Adjust oven rack to upper-middle position, and heat oven to 350 degrees.

    Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.

    Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.

    Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

    Savory dish would have to be Taco Pie

    INGREDIENTS

    1 (8 ounce) package refrigerated crescent rolls

    1 pound ground beef

    1 (1 ounce) package taco seasoning mix

    1 (16 ounce) container sour cream

    8 ounces shredded Mexican-style cheese blend

    1 (14.5 ounce) package crushed tortilla chips

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C).

    Lay crescent dough flat on the bottom of a square cake pan and bake according to package directions.

    Meanwhile, brown the ground beef in a large skillet over medium high heat. Add the taco seasoning and stir together well. When dough is done, remove from oven and place meat mixture on top, then layer with sour cream and cheese, and then top off with the crushed nacho chips.

    Return to oven and bake at 350 degrees F (175 degrees C) for 10 minutes, or until cheese has melted.

    I usually add a can of refried beans before the meat, and we top with the usual taco toppings (i.e lettuce, tomato, black olives, sometimes salsa)

    SWEET DISH : take 10 marrie biscuits and make powder, mix with cashew nut powder, half teaspoon vanila essence, and all mix with condensed milk (100gm). keep everything in a foil paper with tightly closed and keep in the freezer for 2hrs. after cut and eat.
