Really fresh eggs stick pretty bad. When hard boiling I try to plan ahead and buy eggs a few days before I make them. A week is great, if it's within the use by date on the carton.

Also, rather than crack them I roll them with gentle pressure on a paper towel on the counter.

The best way that I've found is that as soon as the boiling is done, take the pan to the sink, dump the water, sort of rattle the eggs around in the pan to completely break all of the shells. Now, run cold water over the eggs so that the inner membrane shrinks just a bit. Now, you should be able to more or less slip the membrane off with the egg shell still attached.

After boiling, plunge the eggs immediately into cold water.

I always boil my eggs in cold water, and 1 T. vinegar. I let it boil for about 3 min. and turn the burner off and let them sit in the water to finish cooking.

    PERFECT BOILED EGGS

Place eggs in stainless steel pot, do not stack. Cover with cold water to where eggs are just immersed. Cook to boiling, immediately remove and cover with lid; let stand 20 minutes

If you add plenty of salt to the water the shell will slip right off. It does not make the egg salty at all. Also rinse with cold water to prevent the grey color that you see around some yolks.

Very simply, don't use very fresh eggs. They will stick every time. Buy your eggs a week or two before you need them.

Wait until the eggs kinda float, then rinse them under cold water, crack the outer shell on the counter, and it should just peel off!

put a drop of oil in the water and as soon as they are done cooking submerge them in ice water. when you peel them, roll them across the counter while applying pressure to crack the shells then hold them under the cold water faucet to peel.
