I need a really good recipe for green beans!?
I bought some fresh green beans at the farmers market and have never cooked green beans before. I tried blanching, which works great for asperagus, not so much with the green beans. I don't want anything drenched in butter, just something good and healthy.

In a skillet/pan, heat about 3 tablespoons of olive oil or (bacon grease) add the green beans along with some chopped or sliced onion and even small new potatoes and about 1 cup of water (depending on how much stuff is in your pan)....cook til potatoes and beans are done..... add salt and pepper.....these are delicious.....should you use bacon grease, they are even better. serve with hot corn bread...

Nutty Green Beans
Ingredients:
1 lb fresh green beans, trimmed
3 tablespoons lite olive oil
1 teaspoon balsamic vinegar
1/4 teaspoon black pepper
4 tablespoons coarsely chopped walnuts or pecans, toasted
Lemon wedges (for garnish)
Steps:
1. In a large non stick skillet bring an inch of water to boil.
2. Add beans and cook uncovered until beans are still crisp (about 5 minutes).
3. Drain beans.
4. Place green beans on a serving platter and keep warm.
5. Add olive oil to the skillet plus vinegar and pepper.
6. When this mixture is sizzling stir in the nuts.
7. Drizzle sauce over the beans.
8. Garnish with lemon wedges and serve.

Tomato Green Bean Stew
1 large onion
1/3 cup olive oil
3 cloves garlic
1 lb green beans
1 tablespoon tomato paste
1 large fresh tomato or 2 small fresh tomatoes
1 teaspoon hot red pepper powder
salt
1 bunch parsley
1. Saute the onion in the olive oil.
2. add the garlic, and when the onions are soft, add the green beans, tomato paste, and the fresh tomato, finely diced or crushed.
3. Add 1/2 cup water.
4. Simmer until the beans have absorbed the stew and are soft.
5. Then add the hot red pepper powder, salt and adjust the spices (parsley) to taste.
6. Pour this stew over a bowl of hot rice or cous-cous.

This one is a little different from your usual boiled or steamed green beans:
Lay the green beans flat on a sheet, spray them evenly with olive oil, then sprinkle on a little satl. Put it in the oven at about 350 until they are crisp.(usually about 10-20 mins depending on the oven).

This is simple.... green beans... bacon (cooked about 3/4 of the way) and brown sugar (add to taste) I add alot because the bacon helps hide some of the sweetness. My kids and husband love it!

Green Beans with Bacon
INGREDIENTS:
3 tablespoons butter
8 slices bacon, diced
2 pounds fresh green beans, trimmed and cut in 1-inch pieces
freshly ground black pepper, to taste
PREPARATION:
In a large skillet over medium heat, melt butter; add bacon. Fry bacon until crispy; set aside.
Bring a pot of water to a boil; add beans. Boil for about 10 minutes, or until desired doneness is reached. Drain beans; add them to the skillet with bacon and butter. Toss well and heat until well coated. Add pepper; serve.
Serves 8.

Mediterranean Green Beans
Ingredients
4 cups Fresh green beans, cut into 1" pieces
1 tbsp Extra virgin olive oil
1 1/2 tsp Crush garlic
1 cup Chopped seeded plum tomatoes
3/4 tsp Dried oregano
1/4 tsp Salt
1/8 tsp Ground pepper
Preparation
Fill 3 quart pot half full of water and bring to boil over high heat. Add the green beans and boil for about 4 min or just until the green beans are crisp tender. Drain the beans well and set aside. Add the olive oil to the pot used to cook the green beans and place the pot over med heat. Add the garlic and cook for a few sec, until the garlic hust begins to turn color and smells fragrant. Add the tomatoes and the oregano, salt and pepper. Cover and cook for 1 min. Add the green beans to the mixture and toss to mix well. Serve hot

Tomato Sassy Green Beans With Ham
4 cups fresh green beans (measure after washing and snapping into 1/2inch pieces)
2 small white onions (chopped)
4 garlic cloves (minced)
1/2 lb ham (get deli to "slab" cut it)
1 cup V8 vegetable juice
1/4 cup butter
1/4 teaspoon pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
Chop ham into a small dice.
Heat butter in a heavy, large pot with a lid.
Place onion in butter, and sauté over a medium heat for 2-3 minutes.
Add green beans and ham, and stir-fry for about 5-6 minutes.
Add the V-8 juice, and the garlic, along with the spices.
Stir well, lower heat to a slow simmer and cover.
Simmer the green beans for 30-40 minutes, stirring often.
Remove lid, turn heat up to a faster simmer and cook for 5 more minutes until liquid reduces.

Slice in half-length wise-quick fry in some olive oil with some onion and red bell pepper. Season to taste.

My grandmother boiled em with a peice of bacon They gotta be really young to blanch or stir fry , might try steam good luck from Texas, oh you might try growin them yourself really easy and grow fast try Kentucky wonders
