Charcoal grill ideas? Having a party for 30+ peeps and need some easy but GOOD food!?

We're going to be at a park that has charcoal grills to use, as well as running water, but no real kitchen to use. I thought of just brats and hot dogs, but that almost seems too simple!

    No do the brats and hot dogs..... You will be less stressed and much happier in the end. Plus kids and adukts can eat it and they cook fast of the bbq compared to chicken and ribs and ect......

    Here's one not many people ever think about doing. Get yourself some fresh cut pineapple(cored and sliced like a donut), apricots(sliced in half or even quarters), and some black hills style ham sliced about a quarter of an inch thick. Lightly grill the fruit until it has little grill marks on each side and place onto a plate AFTER it's marked. Grill the ham completely and until golden brown(Soak over night in some pineapple juice mixed with a little brown rum to truly bring out the flavor. Don't worry, the alcohol WILL burn off while cooking.) When done cooking, slice ham and fruit and stick them together with some tooth-pick's and voila'! A great appetizer! If you make enough, you could even call it a meal.

    We go camping a lot, and we use our charcoal grill for pretty much everything we eat. I've made Jalapenos stuffed with cream cheese and wrapped in bacon (make sure you grill them inside of a foil pan, otherwise the dripping fat from the bacon will make your grill catch on fire! I learned this the hard way. :-) ), quesadillas, wings, burgers, steak, chicken, and ribs. I have even done baked potatoes and corn on the cob by wrapping them in foil.

    When I entertain my friends with a cookout we usually marinate some chicken strips in barbecue sauce overnight and grill them over apple wood. It's easy to just grab and go or put them on buns and make chicken sandwiches. Or you could do shrimp kabobs just as easy. In fact in my local store they come pre-made so I just throw them on the grill and enjoy my friends. If all else fails throw on some hamburgers.

    I like to do chicken satay. I do everything at home and take the kabobs with me. Just make sure if you make any type of kebobs you soak the skewers fo twenty minutes or so. That way they won't catch fire. I wouldn't worry too much about it though. Who doesn't like hot dogs and sausages. Just make sure you have a lot of side and stuff for people to snak on. We usually snack the whole time.lol

    Brats and dogs sounds fine to me - maybe hamburgers - you don't want too much of a selection, and if there is going to be a lot of people, you don't want it to cost too much.

    Bring along some pea salad, potato salad, chips and dip and baked beans.

    I have a good recipe for pea salad and potato salad.

    Sounds good! People at a picnic are not expecting haute cuisine! Have some good sides, like potato salad, coleslaw, chips, a veggie tray, maybe baked beans. Ok, now I'm hungry. Sounds like fun.

    right here's a very uncomplicated nacho dip that tastes superb! one million kit Velveeta mexican chese (you're able to do tremendously spiced or easy) one million can Hormel chili +/- eco-friendly onions soften it in an oven-risk-free bowl in the Microwave or oven (for even with the undeniable fact that long it takes to be all melted) stirring in some situations, and consume it with tortilla chips. this is superb!!

    kebobs with shrimp and fruit, coat everything in lime juice and fresh black pepper, then brush with olive oil and grill.

    roasted fruit served w/ ice cream is popular this time of year. good fruits are peaches, pears, pineapple

    with a good piece of cedar, you can grill fish. buy cedar @ your local hardware store (untreated, of course) and soak in the tub with warm water for 4 hours before cooking on it.
