You are my kind of Chef, one who wants to please his clientèle, not one of those culinary snobs that so many chefs become. I also like the answer you gave my fellow Texan who was planning a trip to your beautiful country. How about a South Texas Classic. If you decide to use it you will have to do the math to increase the servings. This recipe makes 6 servings, or 2 if you are feeding hungry cowboys:)
Original King Ranch Chicken recipe
I've been making this for years - it's a family favorite.
Ingredients
1 can cream of chicken soup 1 pkg. grated Monterey jack cheese
1 can cream of mushroom soup 1 chicken, boiled and de-boned
1 can Rotel tomatoes w/ peppers
1/2 cup onion chopped
1/2 cup green pepper chopped
1 cup+ chicken broth
12 corn tortillas or1 pkg. tortilla chips
Directions
Boil chicken, remove meat from skin and bones.
Sometimes I will use 6-8 chicken breasts instead of whole chicken when I'm in a hurry.
Saute onions and green pepper.
Mix with soups, tomatoes, cubed chicken, and chicken broth.
Line bottom of Pyrex casserole with six tortillas.
Add 1/2 of chicken/soup mixture; spread over tortillas. Sprinkle grated cheese over mixture.
Then make another layer of six tortillas, chicken/soup mixture, and cheese. Cover with foil and bake at 250-300 F 1 hour until cheese
is bubbly.
I've also substituted Cheddar Cheese, Velveeta in place of the Monterey Jack cheese and it was all good
Try this dessert it is also a family favorite.

If you want to eat truly healthy, lose body fat consistently, normalize your blood pressure, cholesterol levels, prevent cancer, and even boost your brain health and energy levels, you may have heard all over the news that the Paleo Diet has been found to be one of the best methods of achieving all of these benefits compared to any other popular "fad" diets out there. Go here https://bitly.im/aMG1F
The truth is that the Paleo Diet will never be considered a fad because it's just simply the way that humans evolved to eat over approximately 2 million years. And eating in a similar fashion to our ancestors has been proven time and time again to offer amazing health benefits, including prevention of most diseases of civilization such as cancer, heart disease, alzheimers, and other chronic conditions that are mostly caused by poor diet and lifestyle. One of the biggest misunderstandings about the Paleo Diet is that it's a meat-eating diet, or a super low-carb diet. This is not true

It really depends on the type of restaurant it is. An all-American restaurant - you can't go wrong with a pot roast complete with vegetables (but do some creative things with the vegetable choices!) and some red velvet cake for dessert. People will die for the cake because it looks so different than what most are accustomed to, so you should sell tons of it (with a cream cheese icing) based on curiosity alone!

what about scallops, prawns, and baby shrimp , peppers and onions in a white wine cream sauce served over a bed of angel hair pasta.
pan fried oysters with a citrus aioli, mixed baby greens topped with marinated artichoke hearts, kalamata olives, garlic and feta cheese tossed gently with a balsamic vinagrette.
for dessert make strawberry nachos: slice strawberries and soak them in sugar and grand marnier, for the chips toast tortillas with a little butter on them and then sprinkle with cinnamon sugar, after you toast them break them apart or before hand you can cut them into specific shapes. top with a place the chips in the bowl first, add strawberries, add some whipped cream and finish with chocolate shavings.
I am just making suggestions since you didnt say what kind of restautrant you work at. cheers!

Where are you located? If it's summer where you live, get a handle on locally grown produce and plan some dishes based on what is available. You might be able to buy direct from a grower for a better price.

Lasagna with a tossed salad and crusty garlic bread. You can't go wrong with cheese cake and a berry topping for dessert. That is what sounds good to me right now.

Not sure where you are, but here in upstate ny, berries are in season. I sometimes make a riff on tiramisu but using berries. I also make it in individual portions like a parfait.
Sugar some berries (strawberries, raspberries, blueberries - whatever you have ) and mash to macerate and let juices run.
Then, rim a bunch of tall flutes or a white wine glasses with the berry juice, dip it in sugar to make a frosted rim and set aside to dry
Blend the mascarpone with something that flavors it but keeps it white against the side of the glass to contrast with fruit soaked ladyfingers -( try some kind of combo of 10x sugar, vanilla, limoncello or rum and lemon zest...or a simple syrup infused with real vanilla flecks and lemon zest )
layer using ladyfingers dipped in a combo of the macerated juices and chambord
top with a layer of the mascarpone, then layer plain unsugared berries, then more dipped lady fingers stopping about 2/3 up the glass.
top with a mint sprig, or two lavender sprigs
