i know it has to do something with the size of the engine
and that theres like 50cc and 125cc and 200cc

cc= cubic centimeters
so a 250cc bike would mean the engine is 250 cubic centimeters.

Well, yeah... cubic centimeters are a unit of measure of volume i.e. centimeters^3. However, in motorcycles these numbers are sort of ... well... vague. A 125 cc bike could be 100cc, could be 150... depending on the manufacturers marketing team. They try and line the bike up with the class that they race in, both size and power, etc.
Engines measure displacement by the amount of fluid the piston displaces when it moves (theoretically).
A good analogy is a car engine, i.e. a Chevy 350 is billed these days as a 5.7 liter. It's not. It's actually right around 5733c^3. Motorcycles will vary more than cars simply because they play more games with the engineering. This is not a bad thing. My 400 cc engine in my Yamaha is about 398 c^3.

cc stands for cubic centimeters. Which is the unit for total volume of air/fuel mixture an engine can draw in during one complete engine cycle.
That volume is swept as the pistons are moved from top dead centre to bottom dead centre.
If you have a 125 cc motorcycle, the cylinder for piston must have a 125 cc space for burning fuel and air.

This is the capacity of the cylinders. When the piston goes down inside the cylinder it sucks in a certain amount of gas/air mixture from the carburetor or fuel injector. The bigger the engine, the more that is. Of course you have to multiply this by the number of cylinders if there is more than one.
This is related to the size and weight of the bike, and also the power, so it's an easy way to compare bikes or to classify them into categories.

Honda made a 6 cylinder 250 cc racing bike in the 60's the sound of that thing was incredible,that's about 42 cc's per cylinder.

A cc is one-thousandth of a liter. If the engine were modified to work as a water pump, it would pump as many cc's as its engine size for each turn of the crankshaft.

this is the displacement of the engine. as the piston moves up and down (sucking in air/fuel mixture) the area of where the piston goes is measured in cubic centimeters ...
where alot of cars are now measured in litres, example 5.9L
