You can't go from digital to analog (at least not without a fancy (and expensive) digital to analog conversion adapter), BUT most amps with multichannel inputs also have other input choices ... stereo analog, digital coaxial and/or TOSLINK optical digital ... are you sure you don't have an option that allows a direct interconnect? For example do you have an optical connection on the DVD player and amp? If a modern amp does it have HDMI ... which carries digital audio (of course you would also need HDMI on the DVD player)
If not a direct connection option, you could consider some form of adapter cable (e.g. digital coax to optical) or, if you are willing to spend $100-200 (which I would not recommend) a digital to analog converter. Finally, if everything else fails you could use stereo and a matrix decoder (e.g ProLogic) to get surround ... not ideal, but at least you would have sound until you can trade your DVD or amp for something with a "normal" range of connections.

You cant. the digital coax carries one digital signal to be decoded by your reciever, while the 6 RCA's are 6 analog signals that need to be connected in the 6 same ways on the reciever.

It would be better to by pass the TV using a converter box that will split the signal into digital audio out and HDMI in on the TV, many people try this getting the right cables and converter box to find out that they cannot get sound, not only do you run the risk of the TV having no HDMI conversion available you also run the risk that the Computer does not follow the HDMI protocol...many computers will have no sound at all through HDMI or they pass on an anolog signal through HDMI, this will depend on what sound card you have in the Lap top and what it is capable of doing also how its connected to the Graphics card through an HDMI output....

You can't. A digital coax cable output only connects to a digital coax input. It is a specific type of signal.

I'm guessing that you have on old analog receiver. To get true surround sound, you'll have to buy a new digital receiver which will have the correct connections. I had to do the same thing, and it was worth it!
