How easy is it for Turks to cross into Greece?
Does anyone know what the restrictions are regarding travel of Turks (not part of EU) into Greece (EU)?
Does the lack of restrictions include those with criminal convictions?

As citizens of a non-EU member state Turks would require a visa to Greece. Greece is both an EU and a Schenghen area member state.
So, first you need to call the nearest Greek embassy or consulate in Turkey and ask them about the needed documents and the time it would take to get the visa:

The most important is to have a valid reason to travel there. The same applies for Bulgaria as of the beginning of the year.

as long as they have a passport they can go to Greece no problem. its when they go further afield they could have problems. a lot of Turkish people will be denied the chance to travel. for my husbands family to come and visit us in the UK (he is Turkish) we have to consult an immigration solicitor and get visitors visas for them. we must be able to guarantee that they will stay with us and will return within the required time.
