I love bison, though the taste is quite similar to beef.
BTW, the meat has no influence on the spiciness of Buffalo wings. They are made of chicken, named after the fact that the dish was created in Buffalo. The spiciness comes from the hot sauce used to coat the wings after they are cooked.

So skip the buffalo wings. They're high in fat anyway. Give the bison a try. What have you got to lose? You can get regular hamburgers anywhere.
