Help me out guys and gals?

I am recently a new stay at home mom and I am trying to break up the boring dinners with some new dishes. Now I love the food network but if I watch all day I might see 1 or 2 dishes that I would have the ingredence for and that my kids will eat, I mostly watch it for the good tips and ideas. But I want to know if and of you have something original, not to fancy, and with out any strange ingredence that I'll have to go searching for. Any recipies will be apperciated. Thanks so much!

This Italian style meatloaf recipe is made in the crockpot:

2 pounds extra lean ground beef

2 cups soft bread crumbs, loosely packed

1/2 cup spaghetti sauce, your favorite

    1 large egg, lightly beaten

2 tablespoons dried chopped onion or 1/4 cup finely minced onion

    1 1/2 teaspoons salt

    1 teaspoon garlic powder

1/2 teaspoon dried Italian herbs, crushed, or use a mixture of oregano and basil

    1/4 teaspoon pepper

    3 tablespoons spaghetti sauce

2 to 3 slices Mozzarella cheese, about 2 to 3 ounces

Fold a 30-inch long piece of foil in half lengthwise. Place in bottom of a slow cooker with both ends hanging over top edge of cooker. I also put a piece of crumpled foil in the bottom to keep the meatloaf out of the fat. The foil strip will make it much easier to remove the meatloaf when it's done.

In a large bowl, mix ground beef with bread crumbs, 1/2 cup spaghetti sauce, egg, onion, salt, garlic powder, Italian herbs, and pepper until well blended. Shape into a loaf. Place in slow cooker. Spread 3 tablespoons spaghetti sauce over the loaf.

Cover and cook on HIGH for 2 1/2 to 3 hours or on LOW for 5 to 6 hours, or until juices run clear. Top loaf with cheese slices, overlapping, and continue to cook (turn to HIGH if necessary) for 15 to 25 minutes longer.

Use ends of foil to lift out meat loaf and transfer to a serving platter.

I just invented this casserole last weekend to feed unexpected company, and it was a big hit with my guests. I hope you like it, too!

    Potatoes O'Riley

    Ingredients:

1 large bag Potatoes O'Brien, partially thawed

    1 can mushroom soup, undiluted

1 carton chive and onion cream cheese

1/2 tsp. EACH: onion and garlic salt

    2 cups cubed ham

1 8 oz. package shredded Cheddar cheese, divided

Preheat oven to 350 degrees. Place potatoes in a greased 9x13 casserole. Break up any large clumps of potatoes. Sprinkle with the ham and half the Cheddar cheese.

In a large mixing bowl, blend soup, cream cheese, and seasoning. Pour soup over the potato and ham mixture, and stir well. Sprinkle with the remaining cheese, and bake for 45 to 55 minutes, or until bubbly.

    Note:

I haven't tried this with garden vegetable cream cheese, but I'm guessing that it would be good, too. I'm going to experiment with adding some broccoli florets or green peas in the future, too.

I served this with a green salad and some breadsticks for an easy meal.

This goes great with burgers and kids love them:

Take medium to small size potatoes, wash and microwave them til they are done. Let them cool down and slice them in half lengthwise. Scoop out the potatoes to make a shell. Take the potatoes that you scooped out and mash mixing in sour cream, butter, bacon bits and cheese. (and anything else the kids might like). Put the mixture back into the potato shells and put them on a cookie sheet lined with wax paper. Add a small amount of cheese to the tops of the shells and back on 350 until the cheese melts and the potatoes are hot.

Try asking for a cook book for your birthday or Christmas or something.

They have one out there that each recipe has 5 ingredients or less.

Betty Crocker also has a cookbook that is very good. I have one and have used it for many years. In fact I got my daughter one for Christmas last year and I think she is using it to hold up one end of her sofa. Maybe I could send it to you since she isn't using it.
