if you want a hand,i do a lot of BBQ for mates, pay my travel expenses, and provided I'm not elsewhere ill come along.I scrub up well.!
on a practical side, make sure everything is cooked through, which doesn't mean charcoaled on the outside!
Stuff like chicken thighs are best microwaved first, then just colour them off on the grill.I par boil sausages first too, them same technique.
Dont buy cheap prepared BBQ stuff.Butchers invariably use commercial dry rubs to disguise cheap meat, and commercial burgers are an abomination. Its also cheaper to make your own from minced steak.I won prizes for my burgers in the 80`s
Cold buffet-cant go wrong with whole salmon-farmed is cheap, looks impressive, served with mustard mayo+dill sauce covers up the relative lack of taste, wild is better.
I make my own gravard lax too,a really good use for farmed salmon
If you need anything else get in touch
You will find a kitchen helper a vast help.i use a mate,to clean up behind me etc
Doing it all yourself is more tiring than you think it will be
Also, chocolate fountains always seem like a salmonella farm to me
Source(s): Didnt know you are in Germany,so i probably wont come over and help, but Ive been doing BBQ for friends relations and festivals for 23 years, and buffets for rich people for 10,so if you need any help... - skylerLv 51 decade ago
I make a GREAT lingine salad that everyone LOVES and it is diffrent
1 pnd linigine cooked
1 can sliced black olives drained
1 can baby corns drained
1 stick of pepperoni cut into chunks
1 pint cherry tomatos cut in 1/2
1/4 cup parm cheese
1 8oz bottle italian salad dressing
3/4 a bottle of salad supreme sold in the spice aisle
Mix all ing. together and put in frig is best if you can make the night before
I also made potato salad but instead of boiling your potatos I baked them

I don't know where you live and if you have access to fresh shrimp but a wonderful appetizer is grilled shrimp and pineapple wedges. The two go together great. Use a toothpick to place a shrimp and pineapple wedge together. It is a great finger food with no mess.

Sounds a good idea, but you may want to consider a veggie option - don't want to offend anybody , especially business contacts. Not being a veggie myself I can't recommend anything off the top of my head, but maybe somebody else could? Hope it goes well!

cold salads that can be done in advance, pasta, cous cous, potato salads. cold meats and cheeses, lots of fresh bread. roasted cherry tomatoes, roasted baby vegetables.
fresh fruit salads, cheesecakes etc are always nice.
