Below are a couple of German websites on horse names, not all are german origin but this will give you a better selection.
Stute is mare, Hengst is stallion and Wallach is gelding.
My favorites:
m: Winnetou: the name of a character in the books of the german writer Karl May (see http://en.wikipedia.org/wiki/Winnetou)
Walzerkö***: King of the Walz (the dance)
f: To bad it has to be female my favorite would bew Janosch, the alias of a german childrens writer-but that sound more male
