Below are a couple of German websites on horse names, not all are german origin but this will give you a better selection.

Stute is mare, Hengst is stallion and Wallach is gelding.

    My favorites:

m: Winnetou: the name of a character in the books of the german writer Karl May (see http://en.wikipedia.org/wiki/Winnetou)

Walzerkö***: King of the Walz (the dance)

f: To bad it has to be female my favorite would bew Janosch, the alias of a german childrens writer-but that sound more male

    Juwel (yewel)

Jura - a type of rock found in southern germany, also the german name of a geological aera (Jurassic) see: http://en.wikipedia.org/wiki/Jura_mountains

    Boy:

    Waldemar---German, Scandinavian, Polish

Germanic cognate of the Slavic name VLADIMIR, composed of the Germanic elements wald "rule" and meri "famous".

Walter---From a Germanic name meaning "ruler of the army", composed of the elements wald "rule" and heri "army"

    Wenzel---Medieval German form of WENCESLAS

    Wilhelm---German cognate of WILLIAM

I hope this helps! Good luck! There are still a few more boy "W" names at the website!
