A Quick & Easy Meatloaf Recipe?

I'm looking for a quick and easy recipe for meatloaf that doesn't contain 20 plus ingredients and herbs! Anybody care to share?

    1lb ground beef, one egg, 1/2 cup bread crumbs, salt and pepper to taste, and any other spices you might want to add. Throw it in a pan, slap some ketchup on top and bake at 350 for 45 minutes.

    I just bought this community church cookbook and they have this recipe for a meatloaf that I cant wait to try. It sounds unique and different. I am going to try it tonight. Here is the recipe. Clare's meatloaf 1/2 c. Grape-Nuts cereal 1 pound hamburger 1/4 c. chopped onion 1/2 c. water 1 egg, slightly beaten 1/2 tsp. salt Mix Grape Nuts and water; let stand for 2-3 minutes. Combine rest of ingredients; mix well. In a greased pan, shape into loaf. Bake one hour at 350'. To get moist loaf, cover with aluminum foil for first 30 minutes and then remove. EDIT: I made this meatloaf tonight and it was really delicious and VERY moist. I baked my meatloaf for 50 minutes instead of an hour. So you may need to adjust the time for your meatloaf. I also made a gravy using the pan drippings. My family loved it. This recipe is definitely a keeper. I think next time I make it I am going to add Italian Seasoning to it.

    This is the recipe my mum makes - I don't think she'll mind if I share it! Its super easy...the longest part is waiting for it it cook! The glaze stops it from turning out dry like some meat loafs.

    1 kg beef mince

    1 cup dry breadcrumbs

    4 tablespoons diced onion

    1 teaspoon dried parsley or 1 tablespoon fresh parsley, chopped

    salt and pepper to taste

    1 cup sour cream

    2 eggs

    2 tablespoons Worcestershire sauce

    1/2 cup tomato or plum sauce

    1 1/2 tablespoons golden syrup or honey

    1 teaspoon of Worcestershire sauce

    Combine the first eight ingredients together very well. Shape into a loaf and place on a tray lined with foil. Bake in a moderate (180 degree Celsius) oven for 45 to 50 minutes. Combine last 3 ingredients and use to glaze loaf...simply pour over loaf. Return to oven and bake for a further 20 minutes.

    Mom's Best Meatloaf

    1 lb. ground beef (good quality)

    1 small onion diced

    1/4 Cup dry bread crumbs, plain or seasoned

    1 egg

    1/4 Cup Salsa

    Ketchup

    Spray a loaf pan with non-stick kitchen spray (Pam). Mix everything together except the ketchup. Put in the loaf pan and create a small grove in the top of the meat. Fill the groove with ketchup.

    Bake 1 hour @ 375 deg F.

    Use 2lbs hamburger, 1# Italian sausage, green pepper,(if you like), 1 onion, seasoned bread crumbs, 11/2 cups, 2 cans of tomato sauce, 2 eggs. Mix together and bake at 375. When finished, I like to make cheese dip, Rotel tomatoes, l can, and Velveeta cheese, then pour over meatloaf. You will love.

    Cottage Meatloaf

    “Meatloaf made with a hint of red pepper and tangy tomato juice, glazed with ketchup, mustard and brown sugar.”

    * 1 1/2 pounds lean ground beef

    * 1/2 cup ketchup

    * 1/3 cup tomato juice

    * 1/2 teaspoon salt

    * 1/2 teaspoon ground black pepper

    * 1/8 teaspoon crushed red pepper

    * 2 eggs, beaten

    * 3/4 cup fresh bread crumbs

    * 1/4 cup diced onion

    * 2 teaspoons prepared mustard

    *

    * 1/2 cup ketchup

    * 1 teaspoon prepared mustard

    * 4 teaspoons brown sugar

    DIRECTIONS

    1. Preheat oven to 400 degrees F (200 degrees C).

    2. In a large bowl, combine ground beef, 1/2 cup ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion and 2 teaspoons mustard until well mixed. Line a 9x5 inch loaf pan with foil. Press meat mixture into pan.

    3. In a separate bowl, combine 1/2 cup ketchup, 1 teaspoon mustard and brown sugar until smooth. Spread brown sugar mixture over meatloaf.

    4. Bake in preheated oven 35 to 45 minutes, until no longer pink. Drain off fat. Let rest 5 minutes before serving.
