I recently made a "how to" post on sushi on my blog (link below). Sushi is really easy (and cheap) to make at home.
I mainly use imitation crab sticks, but since you want veggie sushi, you can put thinly sliced pieces of cucumber, carrots, avocado or any of your other favourite raw vegetables.
You'll need:
A bamboo rolling mat (very important)
A rice paddle or large spoon
A large bowl
A cutting board
Ingredients:
Nori (roasted seaweed)
Sushi/Calrose Rice
Fresh vegetables
Seasoned Rice Vinegar (very important)
Seseme seeds (optional)
All of the above items can be found for a low price at your local Asian grocery store (many of the major chains have them as well, but a bit more expensive).
1. I use a rice cooker for my rice, but you can just boil it on the stove with equal parts of water for a good consistency.
2. Add the seasoned rice vinegar after the rice is cooked using chopping motions with your paddle/spoon.
3. Lay your nori on the bamboo mat and using a wet spoon, spread the cooled rice over the sheet.
4. Add your vegetarian fillings 3/4 of the way down
5. Tightly roll the nori sheet and seal the top edge with a bit of water.
6. Use a wet, serrated knife to cut the sushi roll into 6-8 pieces.
7. Enjoy!

Well, first make sushi rice. Look for a recipe. Basically it's suchi rice with sugar and vinegar added.
Get a sushi mat for rolling. It helps.
Flatten out some rice on a sheet of nori seaweed.
Put some stuff along the rice near one end. Such as veggie stuff: cooked shitake, cucumber, avocado, veganaise, Japanese pickles, ... use your imagination.
Roll it up. Use water to make the end stick to it doesn't unroll on you. You can also wet the entire sheet of nori first.
Hint, put plastic wrap on top of your sushi mat.
Inari sushi is awesome too, but totally different recipe.

Uh, yeah..rice and veggies is too sushi---the word "sushi" refers to the rice..duh!
Pfffh...anyway.
Make your rice- follow the directions on the sushi bag, and then after it's cooked cut in the vinegar sugar soy sauce mixture as it cools.
Prepare your ingredients -slice your veggies into long thin (almost matchstick) strips. I really like using cucumber, avocado and carrot--you can use whatever veggies you enjoy though.
Lay out your nori on a sheet of saran on top of a bamboo sushi mat. Using damp hands, pat out a handful of rice onto it, spreading it to 3 of the edges- but leaving about an inch or slightly more along one edge bare. Then lay on a thin stripe of veggies across the nori-rice pad, about a third of the way from the bottom. Moisten the bare edge with water or your mixture from the rice. Then, using the mat to roll evenly, roll it up over the veggies, removing the saran as it goes around so that you can stick the moistened edge to the outside of the nori roll. Then roll the saran around the whole thing, roll it entirely in the sushi mat, and gently but firmly pack it together...you'll know it's right when you're doing it.
Then unwrap, slice and enjoy with you favorite soy sauce and wasabi!
Yum!

I bought some rice, a pack of nori (squares of seaweed), green onions and zucchini.
You also need a bamboo, rolling mat.
You can also use marinated tofu (especially if you are near an Asian market). Slice up ingredients into thin strips.
Put down bamboo mat
nori
layer of cooled rice
sliced veggies etc in s strip down the middle
roll
cut into chunks
I used the recipe from Post Punk Kitchen

Here is the pic of what I made.

Veg sushi is super easy. Just prepare and season your rice as you would for regular sushi. Instead of fish or seafood, just add some crisp veggies, such as cucumber, radish, kolrabi, celeriac, carrot, ginger, snow peas, or whatever crunchy veggie you like. Roll it up in the nori and serve with wasabi paste or your choice of condiments. Its the same as regular sushi, just minus the fish! I like to add bean or rice thread noodles for a little extra texture and crunch. Yum!

materials needed,
3 to 4 sheets of "seaweed sheet" size about 25x25 cm
1 bowl of white rice (preferably soft stem white rice)
100 gm each of carrot and cucumber
half tea spoon of vinegar (prefer light apple vinegar)
some mayonnaise
method,
1)slide the carrot and cucumber into elongated shape of about 3 mm thickness.
2) sprinkle vinegar into the above slide vege
3)lay the seaweed sheet, apply a thin layer of mayonnaise
on top of it.
4) layer white rice to about one third to half of the seaweed sheet.
5) lay a few silde carrot and cucumber on top of the rice layer
6)roll it up to cylinder shape
7) cut into 25 mm thickness. to serve

ok so just buy some seaweed and cut it so its like 2 inches wide and like 4 inches long....cook some rice then cool it, spead it over your strips of seaweed then take whatever veggies you want carrots, cucumbers, ovacado (my personal fav.) and cut them up into little tiny strips. put them on top of the rice and then roll it up, it should stick together because of the stickyness of the rice and seaweed!
