Having a pot luck at work, the guest of honor is diabetic, we are doing salads.?
Any ideas, for main dish type salads???

Tossed Salad
1 quart torn salad greens ( bibb or leaf lettuce, romaine or water cress)
1 medium carrot, slivered
1 medium cucumber, sliced or cubed
1 small green pepper, cut in strips
1/4 cup frnch dressing or 2 tbsp frnch dressing plus 2 tbsp mayonnaise
1 clove garlic cut in 2.
1. Salad gree should be washed in advance, even a day ahead. Shake off excess water, wrap in paper towels and refrigerate until ready to use.
2. Rub salad bowl with cut side of garlic ( discard garlic or save for other dishes) Place all vegetable in the bowl, add dressing and toss to caot all ingredients evenly with dressing. Serve at once.
Variations: Any or a combination of the following may ba added:
Beets- coarsely grated
Cauliflower--tiny buds
Celery- thinly sliced diagonally
Greens onions- sliced
onions- thinly sliced
Mushrooms- sliced or whole
olives- whole
Radishes- sliced or cut into flowerettes
tomatoes- sliced
Zucchini- thinly sliced
Preparation time: 10 minutes
Serve 4

I would suggest instead of focusing on the diabetes and deciding to make the guest of honor feel more like a burden (or a rabbit) try doing a google search for diabetic recipes or try almost any grocery store checkout stands.
There are some very good diabetic recipes that are surprisingly good and easy to make.
Unless they have recently been diagnosed then they already know what they can and can't have as well as know that they can have anything they want, in moderation.
Unless the guest of honor has stated they'd like a potluck of purely salads, I think you'll probably make them feel self-conscious and embarrassed by doing that. Not really what you'd want to feel if you were being "honored"

like to coat boneless skinless breasts with one of McCormick's Salt Free seasonings. You may need to pound the chicken if it's really thick at one end. Sear the chicken on high heat in a stainless steel pan for about 2 minutes a side. You want to carmelize the outside, but not burn it. Put the pan in a preheated 350 degree oven, cook 15-20 mins.
Cut it up and mix it with cooked pasta, chopped fresh tomatoes, good olives (not jarred or canned), and some olive oil.
You can dress your pasta with a regular pesto or sun dried tomato pesto instead of fresh tomatoes and olives. Pesto is easy, put sun dried tomatoes, fresh parsley and basil and olive oil in a small food processor. Process it into a paste and put on the hot pasta and chicken. You can leave out the sun dried tomatoes and add pine nuts and parmesan instead if you want.
PS - I agree with odd little animal. There's no need to do a salad only thing and make the guest of honor feel like a freak.

Chicken Tortellini Salad
This simple main dish chicken salad recipe is very fresh and delicious.
INGREDIENTS:
1/2 lb. green beans, trimmed, cut into 2" pieces
9 oz. pkg. refrigerated cheese tortellini
2 cups cooked chopped chicken
1/2 cup minced red onion
1 cup grape tomatoes
1 cup balsamic vinaigrette
1 cup Havarti cheese cubes
12 cup chopped fresh basil leaves
PREPARATION:
Bring water to a boil in a heavy stockpot. Add beans and cook for 3 minutes. Add tortellini and cook until tender, 3-4 minutes longer. Drain well. Combine in large bowl with remaining ingredients and toss gently to coat.

With the newer types of insulin these days, diabetic diets aren't necessarily as restrictive as they used to be. Read here https://tr.im/vhPA3
As with any medicine or diet change, you should discuss it with your doctor. Fruits, both fresh and dried, have a natural sugar in them that will raise blood sugar levels, so be careful about eating too much. Not sure about the nuts. Moderation is always the key. I've been diabetic for 18 years and just recently changed insulin types. I love it because it gives me more freedom in when and what I eat.

Spinach Strawberry Salad

servings
time to make 45 min 45 min prep
1 lb spinach (I pinch off the larger stems)
1 pint strawberries, sliced set a few aside (egg slicer works wonders)
1/2 cup pecans, toasted
DRESSING
1/3 cup raspberry vinegar
1/2 cup sugar or sugar substitute
1 teaspoon dry mustard
3/4 cup vegetable oil
2 teaspoons poppy seeds
1. Toast pecans over low heat, set aside to cool.
2. Combine dressing ingredients and shake well.
3. Toss and garnish with a few sliced strawberries.
4. Serve immediately.
5. If you'd like, use a high speed mini-mixer to emulsify the dressing.

WILD RICE SALAD FOR DIABETICS
1 c. cooked wild rice or brown rice
1 c. diced celery
1 tsp. low fat yogurt
1 apple, seeded and chopped
1 c. seedless grapes
2 tbsp. light mayonnaise
2 tbsp. chopped dry peanuts
Combine all ingredients except peanuts. Toss to mix; cover and chill 3 hours and sprinkle peanuts on top. 4 servings.
DIABETIC WALDORF SALAD
4 tsp. mayonnaise
3 sm. red apples
1/4 c. chopped walnuts
2 tsp. unsweetened pineapple juice
1/2 c. diced celery
Mix mayonnaise and juice. Dice unpeeled apples. Mix with celery and walnuts. Fold in dressing.

Greek Pasta Salad
INGREDIENTS:
1 (16 ounce) package penne pasta
1/4 cup vegetable oil
1 teaspoon lemon juice
1 teaspoon dried basil
1 teaspoon ground black pepper
1 teaspoon garlic salt
2 tomatoes, chopped
1 green bell pepper, chopped
1 sweet onion, chopped
1 cucumber, coarsely chopped
1 cup black olives, chopped
DIRECTIONS
Cook pasta in a large pot of boiling water until al dente. Drain, and rinse in cold water.
In a small bowl, mix together oil, lemon juice, basil, garlic salt, and black pepper.
In a large bowl, combine pasta, tomatoes, green pepper, onion, cucumber, and black olives. Add dressing, and toss to coat. Chill in the refrigerator for 30 minutes.

any salad is good, just make sure that there isn't too much sugar and that there are enough ingredients that will sustain a healthy blood sugar level for a while after the meal
