Adobe's "Photoshop: Classroom in a Book" is what you are after. It will show you several ways to do things, and is easy to use for quick references too. You can get an older edition to save money, such as 7.0. Yyou won't miss much if you don't get the latest edition.

I bought and returned the National Geographic Field Guide to Digital Photography. It was full of beautiful pictures, but the information contained in the book was so basic that I felt like I could have written it myself. It was hardly a field guide at all. There were no reference tables or anything to make it suitable for use as a field guide.

If you are a pure beginner, then this book is worth a look. If you have any prior experience with film photography, look for a more technical book.
