Main dish squash............?

my MIL gave me a large yellow squash (2.5 lbs, i weighed it). i'd like to make a nice casserole or pasta dish, using it all. anyone have any good recipes? i don't want your standard squash - cheese - stuffing - onions - crackers on top - recipe, i'm looking for a tasty main dish. tried and true please......

    I find this method works best with butternut squash but I see no reason why you could not try it with your yellow squash. This is a simple recipe as far as ingredients go but requires a bit of effort.

    Cook your squash as usual and mash up like you would mashed potatoes with milk, butter, salt and pepper. To this mixture add about 2 palm-full's of Parmesan cheese and 1 egg. At this point you can make your own pasta and create homemade ravioli. These are well worth the effort and go very well with either a cream sauce or just melted butter and more parm cheese.

    The easier way would be to buy a box of shells, manicotti, or lasagna noodles. Stuff the shells or manicotti OR make a lasagna with the squash mixture, mozzarella cheese, and cream sauce.

    Yellow Squash Dressing

    INGREDIENTS

    2 cups diced yellow squash

    2 cups crumbled cornbread

    1/2 cup margarine, melted

    2 teaspoons dried sage

    1 (10.75 ounce) can cream of mushroom soup

    1 egg, beaten

    1 large onion, chopped

    1 1/2 teaspoons sugar

    salt and pepper to taste

    1/4 cup milk

    DIRECTIONS

    Place squash in a pot fitted with a steamer basket over boiling water, and steam 10 minutes, or until tender.

    Preheat oven to 350 degrees F. Lightly grease a medium baking dish. In a bowl, mix the squash, cornbread, margarine, sage, cream of mushroom soup, egg, onion, sugar, salt and pepper, and milk. Transfer to the prepared baking dish. Bake 30 minutes in the preheated oven, or until lightly browned.

    *** This recipe is not a main dish, but it has been tried and proven!! ENJOY!!!

    Also try:

    Yellow Squash Dessert

    lrg. yellow goose neck squash - peeled, seeded, cubed

    water - to cover

    3/4 stick margarine

    1 cup granulated sugar

    2 Tbls. vanilla extract

    1/4 tsp. salt

    3/4 cup all-purpose flour

    4 lrg. eggs

    12 oz. can evaporated milk

    whipped cream - to top

    -Place squash in large saucepan and cover with water.

    -Boil for 20 minutes, or until tender.

    -Drain and mash with an electric mixer.

    -Add margarine, sugar, vanilla, salt, flour, eggs, and milk to squash and mix well.

    -Pour mixture into a buttered 9" X 13" casserole dish.

    -Bake in 375 degree oven for 25 minutes, or until slightly golden brown and a knife inserted in center comes out clean.

    -Serve slightly warm with whipped cream.

    ***Delicious!!!
