Recipe for Lemon Breaded Chicken?
Does anyone have a recipe for a Lemon Breaded Chicken? This would be boneless chicken breasts, breaded and baked but with a fairly strong lemon flavoring. I have had this at restaurants before, but can’t seem to find a recipe. Thanks much.

BREADED LEMON CHICKEN
3 to 4 boneless chicken breasts
2 beaten eggs
1/2 c. bread crumbs
2 tbsp. butter
2 chicken bouillon cubes
1/2 c. water (hot)
1/4 c. fresh lemon
Dip chicken breasts in egg and cover with bread crumbs. Melt butter in frying pan. Saute breasts in butter until golden on both sides. Add hot water to bouillon until melted then lemon juice to water. Pour over chicken and reduce heat. Simmer approximately 20 to 30 minutes until chicken has absorbed the water mixture. Preparation time: 30 minutes. Serves: 2 to 3.

1 1/4 lb. turkey (or chicken) cutlets
2 tbsp. lemon juice
3/4 c. dry bread crumbs
1/8 tsp. garlic powder
1 tsp. dried oregano
1/4 tsp. pepper
1/2 tsp. salt
1/2 tsp. poultry seasoning
2 tbsp. grated Parmesan cheese
2 tbsp. vegetable oil
Preheat oven to 350 degrees. Place turkey cutlets in a medium bowl. Cover with water. Add lemon juice.
In a shallow bowl, combine remaining ingredients, except oil. Mix well. One at a time, take cutlets from water and drip into crumbs, turning once to coat both sides. Place cutlets in a shallow baking pan that has been sprayed with nonstick cooking spray. Drizzle oil over breaded cutlets. Bake 30 minutes, or until lightly browned. Makes 4 servings. Extra servings make great sandwiches - hot or cold.

I just add a prepared lemon pepper to the bread crumbs, and a squeeze of lemon juice over the chicken pieces before breading.

you have tempura batter? follow instructions then dip seasoned and deboned chicken breasts... deep fat fry until golden and crispy....
in a saucepan... whisk together lemon juice, water, sugar, pinch of salt and corn/potato starch slurry...simmer until thick... add more water if you want the sauce thinner.... pour over chicken...
