You know whats really good....Take the zucchini and cut it in half the long way and run a spoon down the middle removing some of the meat. Add salt and pepper and fill with mozzarella and Parmesan cheese then make a little dish out of tin foil, add a little butter then trow it on the grill.....yummy.

I like zucchini roasted in the oven. Cut the zucchini in 1/ 2 to 1 inch rounds sprinkle with salt, pepper and olive oil. Roast at 450 until just tender. I also add onions, mushrooms and bell pepper.

Slice lengthwise and scoop out seeds fill with a mixture of cooked rice and hamburger with onions, Mix in tomato sauce or soup. Add more sauce or soup on top and cook 350 covered for 30-45 min. Sprinkle with Parmesan cheese and or top off with mozzarella just before done.

slice it into rounds, dip each slice in flour and set aside.

In a soup dish beat a couple of eggs with some minced garlic and a tablespoon of grated Romano cheese.

In a large skillet, heat vegetable oil, deep enough to cover your slices.

Dip the floured zucchini into egg mixture and into the hot oil.Cook until golden brown, turning once.Drain onto paper towel.

Cut into skinny circles, dip into egg and seasoned flour or batter and deep fry. Serve with ranch or ketchup. or

Cut half lengthwise. Hollow out the seedy part. Fill with a sloppy joe mix and bake.

or Cut into pieces and pan fry in chicken broth with other veggies and maybe some meat. Serve over rice

Roll it in seasoned flour and deep fry it in hot oil. Or steam it in foil, a little bit of water and onion and butter and garlic salt until tender. Both ways are really good and family favorites

Don't boil it, boiling ruins so many vegetables. Slice it and saute it in a little oil with some chopped garlic; season when done with a bit of salt and pepper. Simple and tasty.

My favorite way to serve zuchini is to slice it into rounds and saute it with onion, garlic and butter. Serve with rice.

I have it from my garden both ways, sauted with tomatoes, garlic, & mushrooms.....Or slice it, as is, into a salad.
