Is Global Shrinking as equal an explanation as Continental Drift ?
When I was in high school the idea that continents drift about through solid rock was considered absurd. Everyone "knew" that because the inside of the earth was shrinking as it lost heat and the crust crumpled to fit and mountains were formed.
Today everyone believes in Continental Drift. Why isn't that just as wrong as what they believed sixty or a hundred years ago? Wasn't all that expensive research just a case of scientists looking for and easy job, and just writing up reports of what ever they felt like, just like the Global Warming debate?

Uh, no.
Once young scientists began to take continental drift seriously, they looked around for various kinds of confirmation, or potential refutation.
They found a LOT of evidence, from a variety of fields, all of which make great sense if you understand continental drift, and are really, really hard to explain otherwise.
When you look at sea floor spreading, and at the bands of magnetic reversals, you look at the patterns of island growth and other tectonic activity, you look at the patterns of fossils (similar critters now on different continents, that are best explained as having been a single population that split), and data on what weather patterns were like at different places and times -- all these (and probably more, but these sprang to mind) imply that the continents are sliding around.
There are a lot of books about science that are written for non-scientists, many of them very solid in the science they explain. If you wanted to understand how science works, and why scientists say the things they do, you could read some.
Or visit some scientific web sites and read up.
Scientists don't just write whatever they feel like writing. When they submit papers to professional journals, their names are taken off and the papers handed around to other scientists (called "peer review") to check whether what they say is scientifically sound.
Other scientists then take the ideas and figure out what other evidence there might be to support or refute the ideas, then publish that.
As for climate change, they have more data and more sources of data than they used to, including the very recent evidence of climate change (that was impossible to have, say 20 years ago, since the last 20 years hadn't happened yet) all of which imply that it's happening, it's happening much faster than natural processes (given we haven't had a cataclysmic event that would explain rapid change).

Here's a site that discusses the science of climate change. If you want to understand, you can start there.

Science is like a gigantic Jigsaw puzzle put together tiny bit by tiny bit as people try and work out a clear picture.
But the picture is fractal, every time you fill a hole you reveal at least two smaller often very interesting holes, so no matter how many holes you fill there are always more, but smaller holes than you started with.
Every so often a very brilliant person makes out a picture from a piece of the puzzle, where others could not, sometimes just the idea makes it visible, sometimes like the Continental Drift theory (CD) it does not, indeed often the picture turns out to be an illusion, that goes away as more pieces are added.
The real beauty of it however is that the pieces don't change and over centuries the picture gets ever clearer, what was a vague outline before, becomes ever sharper as new pieces are added.
Insights from before that side pressure causes folding of mountains, is not changed. It is just that the Cause of the pressure is discovered to come from a source that could not have been imagined until it was irrefutable. Then suddenly all kinds of puzzle pieces make sense, and science makes a giant leap forward, never to leap back (and that is key).
And so it is with Global Warming and many other scientific understandings. Scientists found that soot particles cooled the planet and so it does, then and now, but other forces existed they did not imagine.
They worried that too much cooling of that sort would cause an Ice age and set out to see if that was happening. And got quite a surprise as the evidence pointed in the opposite direction. Then a space probe landed on Venus and Melted, and that was a jolting wake up call. The rest is History.
And so it goes with all the endeavors of science, from Continental Drift, to Global Warming, to Paleontology, to Evolution, what was a vague outline becomes an ever more vivid picture, not without surprises and corrections in the details as what was projected is not exactly as actually found,
But it never becomes something all together different, any more than the puzzle that mostly done looks like a farm suddenly becomes a seascape with ships at war, no matter what it said on the box.
I gather that is the point of your question if a bit obtuse.

because now they actually have the technology to see the plates moving. super-sensitive gpslocated many places that can detect and compare tectonic movement all over the world

Most only can believe what a book tells them. They think since a book is in a school, it must be 100% truth. When its not. Plates moving is BS and I have thought that since I was in school over 20 years ago.
