You might want to try the Crazy Cajun restaurant in Seabrook off of Nasa Road 1. I've always thought that their food was pretty authentic. If you don't find their food authentic, you'll definitely find the backwoods shack-esque decorations throughout the restaurant sure-fire authentic.

Just be wary of ordering the fried catfish...I ordered it once and didn't realize it was the whole catfish...head and all. I was a little shocked at having the fish stare at me while I dined. A personal favorite of mine and my wife's is the chicken and sausage gumbo. Good stuff!!!

If you find any, let me know. I've searched all over the Houston/Galveston area for gumbo like my cajun friends make it in Louisiana. Nowhere even comes close. I have to make a big pot of it everytime I get a craving.

Gumbo? Ugh. I hope not.
