Tired of cooking boring dinners, any suggestions?
Every night it's meat, potatoes veggies. or meat, pasta, veggies.... ahhh! I am so sick and tired of eating the same thing!! (chicken, steak, pork chops) I am not a gourmet chef, so I try to make it tasty and easy! But it seems like I am running out of side dish ideas and ways to jazz up my chicken, steak, and pork chops!!! Help me Yahoo family!!!

Stop making all these traditional meals. At least once a week we have what we call the "nosh night". It's a piece of cake for me and something different for the family. It really depends on what I have on hand.
We did it on Monday because I had to work late. I filled some celery with cream cheese, and some with peanut butter. I cut up a cuke and served with some dip that I had left over. I had a few extra soft tortillas and cheese I had left over from tacos and made quesadillas, I actually added some left over chicken breast to this as well, but only because I had it. And this mixture that I make my family really likes, but it might be an aquired taste. In a food processor I dice up ham, about 1/4 block of cream cheese and a good handful of cheddar cheese with a tbsp. or so of mayo. We simply spread this on craclers or rice cakes. My family loves meals like this. It fills all the food groups and is healthy.
Another thing that we do once a week is a country night. Generally on Sunday we pick a country early in the morning. We do a little bit of research and pick a recipe from that country that we might like and go to the supermarket and get the ingredients. I know it sounds too "parenty", I am not one of those crazy parents, but doing a little bit of research about the country, having the kids write down the shopping list and having them shop with you is a good time to spend time with your kids, and they learn a little something. I also let them help me cook. Last week we did Ethiopia, not our favorite, but edible. It was probably us, who knows. But the kids would at least taste it because they helped make it.
Another thing we do often is have breakfast for dinner. Because of our hectic schedules, we rarely have a warm breakfast that I think of from my childhood. Biscuts with sausage gravy and eggs, sausages wrapped in pancakes, cream cheese stuffed french toast, and there a ton of different quiches and egg casseroles.

Different ideas for the same stuff.
Hommade Pot pies chicken or beef
Fried/baked meat pies like a turn over- chicken or pork
Chicken and noodles or dumplings
Stir fry fresh veggies with pork beef or chicken serve with rice
Make fried flour tacos serve with guacamole
Stuffed Bell peppers
Beef stew
Curried chicken
Stewed Pumpkin Chicken
Bacon Wrapped burgers
Spice up old meals with new spice and herbs. Add coconut milk to gravies instead of plain milk. I find that there are so many recipes out there that look good, but need to be spiced up a bit.
If you have children, let them cook a meal one day a week. They can be quite creative?!!.
I have the same problem, finding someting different to cook. Since my children are grown I have my SO do the cooking for a few meals.

One thing I do is read the New York Times food section online every Wednesday. There are usually 2-5 new recipes each week, and they're usually well thought-out and not too time-consuming.
For vegetables, one very easy thing you can make is soup. This recipe I made yesterday, and it was great:

Fish is very easy to cook, but it depends what you can get. Poaching fish is fast and easy, and if you have five minutes more, you can pour off the poaching liquid, boil it down, stir in some butter, and you have sauce for the fish.
Risotto is a nice thing to make rather than pasta, or you can cook other grains (barley, bulgur) using risotto method.
A good easy cookbook is _The New Basics_. Well-conceived and fairly modern.

Swiss Chicken
Chicken Breasts
Stove Top Stuffing (at least 2 boxes)
Swiss cheese slices
Cream of Chicken soup (2 cans)
I didn't put amounts cause it just varies depending on how many ppl you are feeding. If you are just making one casserole dish or a small one, just use one Cream of Chicken soup or just eyeball it.
First, make your stove top stuffing, and set aside. In your casserole dish, first lay down your chicken, then cover your chicken w/ the Swiss cheese slices. Then pour your soup over that, last spoon your Stuffing over the top of all of this. Bake covered at 400/375 for about 35 minutes. Last, bake uncovered for about 10 more minutes until golden brown on top. Enjoy.

look at some recipes in a rachel ray cookbook. She does a lot of 30 minute meals that are really good.
also look at some meals you can cook in a crockpot...just turn it on, do whatever ya got to do the rest of the day and there ya go dinner is ready when you are.

Unless you wants to start adding Buffalo and wild game you eat the same thing like the rest of us beef, chicken and pork. Have you tried any fish lately (I don't like it)

Incorporate some of your meat into a salad. I find a nice big salad a relief when I don't feel like cooking.
