food for a meeting?

My husband and I are taking parenting classes required for our adoption. The participants take turns bringing food to each meeting. We only get a fifteen minute break but are permitted to eat during the class. Most of us have at least an hour drive to get to the class that begins at 6:30 pm so there is no time to have dinner. So what I need are some suggestions of things that are more like finger food than a sit down meal but are still filling enough for those of us who have worked all day and not had a chance to eat before the class. Keep in mind this food has to travel the hour to the class and be able to sit with out heat or refrigeration for 2-3 hours. It also needs to be easy to eat while still participating in the class. Please give me sensible suggestions.

Update:

The food also needs to be ok to make the night before and stored in my fridge till it is time to leave for class.

    I understand your situation.

    We have to cook on the fly for customers sometimes. What comes to mind, is a good Italian style pasta salad with veggies, freshly grated parmesan and pepperoni which only gets better if made ahead of time. Then put it in Zip bags and load into a cooler for transport. Take a bowl for serving.

    Or, make a good Caesar dressing, wash and break the Romaine the night before and bag up, and take a nice bowl and tongs along with some croutons and you toss it on site.

    Or, why not make a nice chicken salad with canned chicken,

    some celery, salt and pepper--put out some bread or rolls and let your friends build their own sandwiches--lettuce and sliced tomato would be nice also.

    Or, go to a Sams Club, BJ's or Costco and get a bag of 1/2 inch meatballs. Get some premade sauce. Put them in a crockpot and on high until the sauce simmers and then turn to low. Get some small deli rolls and slice them, take the crockpot with you and you can have small meatball hoagies at your location.

    Not the most exciting thing in the world, but why not sandwiches? You can get some of that little bread and make them the night before, or just arrange the sandwich meat and cheese on a tray, with the bread to the side, and let people make their own during the 15 minute break.

    A hard cheese, like cheddar and crackers. Look in the snack aisle at the grocery store for chips or pretzels and a jarred dip. Roasted nuts. A simple green salad with an unopened bottle of dressing should hold up.

    Vegetable platter(carrots, celery, etc.) with ranch dressing. Hopefully the dressing will be OK. Ummmmm... this is hard.... how about chips and salsa, or chicken wings, mini meatballs (just keep them in a crockpot in the car. Sausage and cheese balls wrapped up in foil or something, fruit salad. I can't think of anymore right now but I'll come back and edit this if I think of more! Good Luck!

    I would go with a cheese ball with ham inside and some crackers. Make it the night before, take it along with a box of Triscuit Crackers and set it out at the meeting. You could also make a mexican dip with refried beans, chili, sour cream, olives and cheese in a casserole dish and serve it room temperature with a bag of Tostitos.

    This is a good one!

    Pizza comes to mind. Cold or hot you shouldn't get sick from eating it after hours out of the frig. No meat like sausage.

    Anything with mayonnaise will get you sick.

    You could make some kind of hand held pot pies with stuff that will not spoil or cause illness.

    Oh definitely make Mexican layer dip....beans, guacamole, sour cream, cheese, tomatoes, onion, cilantro and olives. Pretty healthy and SO good! Serve it with tortilla chips.
