Humidy is relative to temperature, hence; relative humidity. Higher air temperatures can hold larger amounts of moisture. Suppose, for example, one cubic meter of air is 100% saturated at 70F degrees. There might be 5 cc's of water in the air. At 50%, there would be 2.5cc's, etc. But the same volume of air at 35F degrees would only be able to hold half the water at 100% saturation. So, at 35F, the air would be 100% saturated if it were holding 3.5cc's. Anything more = rain.

That said, refrigerator humidity can vary wildly. If left closed for an extended period, it can become rather dry (under 10%)since the air is being forced over a chilled coil causing moisture to condense and drip away. But open the door on a hot summer day and the humidity level will shoot up to near 100% almost instantly as the cool, dry air collides with the warm moinst air. Ever see the fog that rolls out of an open fridge or freezer? That's 100% relative humidity and indoor 'rain'. Remember; it's all "relative". 100% at 35 degrees is not more than 75% at 70 degrees.

A sling psychrometer is an inexpensive (~$20), yet accurate tool for measuring relative humidity. It's a combination of a wet and dry bulb thermometer. The electronic ones are much more expensive and not nearly as accurate. You can get a sling psychrometer at any HVAC supply house.

It varies as the water vapor will enter when you open the door, and drop out of the air as it flows and blows through the system. At a lot of the time it will be 100%, and then drop to 45 - 50 % relative humidity. It can be measured at 100% indoors when only 60% outdoors, so that varies also, and under designed control, kept in at a margin of 55% + -- 2%

My freezer compartment in the refrigerator is 6.9 degrees F and 49% Relative Humidity. The refrigerator was 34.5 degrees F and the humidity was 41%.

There are many considerations in a house. Do you use air conditioning? What color is the roof and the solar exposed sides of your home? What area you live in and much more.

If your building is very hot in the summer, installing air conditioning will cause problems, mold, moisture. Go to http://www.thermoguy.com/globalwarming-heatgain.ht... to see one function of a building and http://www.thermoguy.com/globalwarming-heatloss.ht... to see the heat loss function. This information can help you chose exterior finishes that don't generate heat.
