Hands down favorite is a sweet potato dish that my SIL makes with pecans and brown sugar....I also like Dressing a lot,,we put chicken meat in our dressing....so it is really a seperate dish.....we have mashed potatoes and green beans,,,real green beans,,not the canned kind...His Mom, before she died a few ago,,,would fill the table with country side dishes,,like field peas, turnip greens, fried okra...

Almost everyone has a version of this cake,,it is one of favorites at Christmas,,,

    7-UP Cake

    1 box yellow cake mix

    4 eggs

1 sm.box pineapple or vanilla pudding

    3/4 cup oil

    1 10 ounce 7 Up or any lemon-lime drink

    Icing

    2 eggs beaten

    1 1/2 cup sugar

    1 T heaping flour

    1 stick margarine melted

    1 small can crushed pineapple

    1 1/2 cup coconut

For cake: Mix 1st four ingredients. Beat until light and fluffy. Add 7 Up slowly and mix well. Bake at 325 for 40 to 45 minutes. Spread with icing while hot.

For icing: Blend eggs, sugar, flour, margarine and pineapple. Cook until thick. Add coconut and pour over hot cake.

( I use my microwave to make the icing. I cook for 3 minutes, stir, then at for 2 minutes intervals and stir each time until reaching the thickness I need. How many times depends on the temperature of the ingredients when you begin.)

    green bean cassarole

2 cans of french style green beans

1 can of either regular or roasted garlic cream of mushroom cream soup

    1 can of milk

2 cups of french fried onions or cheddar flavored french fried onions

combine all ingredients except for half a cup of the french fried onions (you will use the and if you want more later on) in a 2 1/2 quart cassarole dish bake at 350 for 25 minutes. Remove from oven and add the rest of the french fried onions ontop of the cassarole and more if you want to (i usually do) and back for 5 more minutes.

I have done this cassarole with the cream of mushroom with roasted garlic and the cheese flavored french fried onions and it is wonderful.

I love everything, but my dad makes mustard potato salad.

Make mashed potatoes by peeling, boiling potatoes, drain, mash and add butter and a little miracle whip. Then add mustard...enough to your taste and to add yellow color. Add diced pickles and boiled eggs. You could probably add more to it like maybe celery, pimentos, etc. It may even be nice topped off with a LIGHT sprinkle of paprika. But we like ours plain with eggs and pickles. mmmmmmm, I'm soooo ready!
