    Gastrique is a thick sauce produced by a reduction of vinegar or wine, sugar, and usually fruit. It is often served over meat or seafood to add a fruit flavor to the dish. It is made in its simplest form by caramelizing sugar and then adding vinegar. It is often used in tomato sauce to help balance the acid of the tomato

    This is the gastrique recipe i use... good luck!

    just mix together over low heat untill sugar is disolved... very good over salads

    Gastrique:

    1 cup sugar

    1/2 cup rice wine vinegar

    1/4 cup fresh orange juice

    1/4 cup fresh lemon juice

    *2 tablespoons chopped peanuts

    *2 tablespoons chopped chives

    *3 long chives

    *optional

    Possibly a terrible, terrible infection of the GI tract. However, I'm basing this entirely on a really admirable ignorance of cooking that I've cultivated over the years, and a broader knowledge of medical terminology as pertains only to animals, particularly horses.
