Anyone have any ideas for fast, easy diiners? WE are moving this week-end and I don't want to use fast food.

I am also trying to lose weight and also don't want a big mess to clean-up.

    Over the next couple days, just cook ahead for the event. Make more of what you are serving anyway, and freeze part of it in tupperware or zipper bags, and toss in the freezer. Then you just reheat the items. You might also want to make a large cut of meat like a roast or a ham, portion out to serve it different ways. Do as much of the prep work as you can ahead of time, without going nuts, such as grinding up ham for ham salad...add the mayo at the last minute...and freeze it.

    This really goes well with any diet.

    Also have a nice variety of healthy finger foods. Raw fresh fruits and veggies, nuts, bottled waters.

    Monterey Chicken Fajitas

    From: Campbell's Kitchen

    Prep/Cook: 20 minutes

    Serves: 4

    Ingredients:

    2 tbsp. vegetable oil

    1 lb. skinless, boneless chicken breast, cut into strips

    1 medium green pepper, cut into 2"-long strips (about 1 1/2 cups)

    1 medium onion, sliced (about 1/2 cup)

    1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup (regular or 98% Fat Free)

    1/2 cup Pace® Thick & Chunky Salsa

    8 (8") Mission® Fajita Size Flour Tortillas, warmed

    1 cup shredded Monterey Jack cheese

    Directions:

    1. Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook and stir until it’s well browned.

    2. Reduce the heat to medium. Add the pepper and onion. Cook and stir until the vegetables are tender-crisp. Stir in the soup and salsa. Cook until the chicken is cooked through*.

    3. Spoon about 1/2 cup of the chicken mixture down the center of each tortilla. Top with the cheese and additional salsa. Fold the tortilla around the filling.

    TIP: *The internal temperature of the chicken should reach 160°F.

    Many supermarkets have those pre-cooked rotisserie chickens for around five bucks. I always get those and make a quick side dish like rolls and canned corn. I also use the leftovers for chicken sandwiches the next day.

    Also banquet makes these really yummy crock pot meals, or just throw anything in the crock pot. A roast would be really simple and if you put in potato, carrot, onion, your whole meal will be done.

    You could also try those frozen lasagnas. Stoffers makes a good one. They are big enough to feed everyone, and very simple. ooo and don't forget about frozen pizza. Have you ever had California Kitchen Pizza? The chicken bbq, and thai ones are really good.

    What nationality are you,i like to practice dinner and can make something out of no longer something.I were given a killer rooster parmegiana recipe that takes like 40 minutes to practice dinner.you position that inclusive of a salad and a tumbler of wine and also you're waiting.

    Get a roast and dump in some baby carrots, some broth, salt and pepper, bay leaf and some cut up potatoes. I love that crock pot

    ******CROCK POT CHICKEN SANDWICHES

    6 c. shredded chicken (cooked)

    3 c. diced cheese (American or Velveeta)

    1 can cream of mushroom soup

    1 can cream of chicken soup

    1 onion, chopped

    1/2 c. Miracle Whip

    Mix all of above and put in crock pot for 3-4 hours. Stir occasionally. Add liquid, if needed. Serve with buns.

    Follow your instinct as if you were packing a picknic lunch.

    Sanwhiches, meat balls, cold cooked chicken, crackers, boiled eggs, chrisps, and so on.

    Good luck with your new home.

    Baked potatoes with good canned chili on top. You can make it in the microwave.
