Yes I know those! Fantastic! I learned how to make those in school. They are really not that complicated - just as you say above plus sesoning is all that goes into them.
Below I've put an Indian recipe and they are yummy but I dont know if you like spices? If you dont like chili spice then get a curry powder with no chili (jamaican is one) or a mild powder.
At home in Ireland we eat potato cakes and potato farls which is a little different.
I googled a great Irish chef for you and got what looks like a fabulous Irish boxty cake recipe - paul rankin . check it out in the link below - looks fab.
The BBC one looks very fancy eh?
also in Ireland we make colcannon or bubble and squeak with leftover mashed potato. google for good recipes for this.
Enjoy!
Edit:
Oh just realised that the Irish link I gave you has lots of mashed potato recipes including Champ and potato cakes...yum!

My husband's version is to take probably about 2 cups of leftover masheds, 1 egg, some flour, and a splash or two of milk to get the right consistency. His other good one is shepherd's pie. I've also heard you can make bread or rolls with leftover masheds. I've even made a mashed potato and leek soup a few times.

When I have lots of mashed patatoes left over I,slice and fry onions until they just brown, then grate some chese.I line a pie dish with pastry, mix the potato, onion and cheese and fill the
pastry and the cover with more pastry and bake for about 20 mins, but you know your own oven so you will know the temp..
This is great, too, when cold with pickles,or chutney.

Egg and flour is all you need to make mashed potato patties.
Russians use left-over mashed potatoes to make "zrazy" -- potato patties filled with ground beef (previously fried with onions), or sauteed mushrooms, or sauteed mixture of shredded carrots and onions. Zrazy are typically spherical, the size of a tennis ball, and usually deep-fried.

My boyfriend once made a good chicken pot pie with them. Just get a pair of roll-out pie shells (near the cookie dough and cinnamon rolls in the refrigerated section) and spread one in a pie dish. Then put in some frozen veggies (we use a pre-mixed corn, carrots, peas thing) and bite-size pieces of chicken (ooh! you could use turkey!!). We use light and dark meat but it doesn't matter which you use. Then NORMALLY we pour in a can of cream of chicken soup, but this time he mixed half a can of it with mashed potatos and then stirred it all up. Then just cover with the other pie crust and pinch the sides together and bake till golden and bubbly. Oh, and don't forget to cut a couple holes in the top crust before baking so it doesn't pop!

I like to just heat them up in a microwace and fry an egg the next morning.... Corned beef hash with some onios adds flavor too.
Left overs are always nice the next day as well the first day. Be creative.
