A nice dry rub ... kosher salt, brown sugar, hot paprika, and some chili powder.
Put him and some red bell peppers on a skewer and grill away!

from my expereince you should do the following:
Take a sharp knife and split its body in two.
Blood will flow (keep the blood for the sauce later)
Shave the furr, cut off the feet and take the insides out of the chinchilla. After you can grill the carcass with chili powder and a miz of red wine and honey.
For the sauce use olive oil, the blood, kayenne powder, a teaspoon of salt, lemon juice and a pinch of flour

Do not cut it up, throw it on the grill as is, when done gas will excape from the bun hole, then put it in the blender , best durn chinchilla shake you'll taste

You've come to the right place! Being from Texas, we can BarBque anything. Field dress and skin the little bugger and stick some diced shrimp, jalepeno peppers and cream cheese in it and wrap his happy butt with bacon. Grill 'till done.
