Chocolate thunbprint cookies?
im making raspberry walnut thumbprint cookies can i make them chocolate? how do i make the filling? I only want to no how to make the filling!!!! : ) thanks

You can make them chocolate. There are some rules though: If your recipe uses less than 2 cups of flour, substitute 1/4 cup of the flour with 1/3 cup of cocoa. If your recipe is 2 cups or more of flour, sub 1/3 cup of flour with 1/2 cup of cocoa.
The filling is easy. Just spoon a dab of jam (about 1/2 to 1 teaspoon) into the thumbprint before they go into the oven.
OR, do you want a chocolate filling? (I'm confused). For this, I would put the chocolate into the cookies after they come out of the oven. Here's a recipe for chocolate filling:
3/4 cup (4 ounces) chocolate chips
1 tablespoon butter or shortening
2 tablespoons light corn syrup
1 tablespoon water
1 teaspoon vanilla
Put chocolate and butter into a microwave safe bowl. Microwave at 50% power for about 2 1/2 minutes, stirring every 30 seconds. Take out of the oven before the chocolate is completely melted. Add corn syrup, water and vanilla all at once, and stir quickly to combine. Put this mixture into a plastic storage bag, and seal tight, expelling most of the air.
Cut a hole about 1/8" in one corner. Use this bag to gently squeeze chocolate filling into the indentations of your warm cookies. Let cool completely.
If you don't have corn syrup, I'd just melt some chocolate or chocolate chips gently in the microwave, and put it in a bag and squeeze it into your cookies--just ignore all the other ingredients and use chocolate alone.

don't even make filling. what I do is put either 3-4 small semi sweet chocolate chips or 1 large milk chocolate chip in the thumbprint right when it comes out of the oven. In a minute or two they are starting to melt and I use a toothpick or tip of a knife to swirl the chocolate together and fill the thumbprint. it hardens back up as it cools, and it is so easy and delicious!!

Just wanted to share a quick way I make walnut thumbprint cookies. I use the sugar cookie dough in a roll and I cut slices about 1/2 inch thick and cut those in half and roll the halves into balls. I then dip in egg white and roll in walnuts. Cuts the time in half!!!
